    You are absolutely right about adding the sugar, my aunt taught me this and she learned it from a great Italian New Orleans chef at a big hotel back in the 60's.

    So interesting!! I'm Sicilian and my family for generations did a lot of the same stuff you do. We use the spoon method to get rid of the grease on top of the sauce! I never met anyone else who does that except my Mama and you! And also, she taught us to "clean" the chicken and trim it very similarly to the way you do it as well! Unbelievable that you do a lot of the same things. Smart stuff! Thank you. Oh, one more thing. You are an honorary Italian, because you use whole milk ricotta! And it is a great recipe here (coming from an Italian/Sicilian!)

    You can also skim the oil from the sauce using a slice of bread, and then fry it. Its the best way to make fried toast.
    Alternatively you can make croutons, just skim the oil, drizzle it over cubes of stale bread and fry or bake em til crispy.

    Thank you! I didn't even think about using a potato masher to break up hamburger/sausage, I ordered one while watching this video. Btw, when you showed the pasta water trick, reminded me of something. My husband can taste any thickener I use for soups/sauces & he hates it. I heard using potato flakes works as thickener. It DOES!! I just put it in when he ain't watching, he's none the wiser, y'all!! 😂 Love your channel, God bless you ❤

      So true @riac5388! I'm a seasoned veteran who revamped my cooking to the new updated Camirra style of cooking. I've used ingredients I allegedly didn't like and have been pleased when I use them in Camirra's recipes. I was going to make her turkey wings next but NOOOOWWWW, I gots ta make this ziti. Dang it Camirra, girl you have me exhilarated by not having to think of what to cook and how to execute. That in itself is winning! Love ya Camirra! Have a wonderful weekend @riac5388!🎉

    The pepperonis send it over the top in the best way 🔥🔥 Another home run video!! 😊
    Also, I make my ziti pretty similar to yours, but I love adding crushed fennel seed. You gotta try it sometime if you haven’t already. It makes every Italian tomato sauce taste really complex.
    I think I’ll make this soon; I’m inspired!

    • @CamirrasKitchen
      @CamirrasKitchen  Рік тому +2

      So since the Italian sausage is full of fennel I’m thinking we might be getting a similar flavor. That being said I have extra fennel seed. If you suggest I’ll try adding more. What you think?

    • @jackcarter2767
      @jackcarter2767 Рік тому

      ahhhh yeah that's a great point about the sausage. you did say you were using hot Italian sausage. Well, you might be alright then! I often make this with turkey sausage and have to replace all the flavors myself, so that's why fennel came to mind! :) Either way, your final product looks soooooo tasty!
