So interesting!! I'm Sicilian and my family for generations did a lot of the same stuff you do. We use the spoon method to get rid of the grease on top of the sauce! I never met anyone else who does that except my Mama and you! And also, she taught us to "clean" the chicken and trim it very similarly to the way you do it as well! Unbelievable that you do a lot of the same things. Smart stuff! Thank you. Oh, one more thing. You are an honorary Italian, because you use whole milk ricotta! And it is a great recipe here (coming from an Italian/Sicilian!)
You can also skim the oil from the sauce using a slice of bread, and then fry it. Its the best way to make fried toast. Alternatively you can make croutons, just skim the oil, drizzle it over cubes of stale bread and fry or bake em til crispy.

Btw, when you showed the pasta water trick, reminded me of something. My husband can taste any thickener I use for soups/sauces & he hates it. I heard using potato flakes works as thickener. I learned to weigh the flour and not just measure, I learned to use mayo instead of egg to coat breaded foods that I'm going to fry, I learned to use Boursin spread in my ricotta for baked ziti, etc...I learned so much from you! thank you for your vidoes, always watching and learning :) My dishes are turning out great!

ahhhh yeah that's a great point about the sausage. you did say you were using hot Italian sausage. Well, you might be alright then! I often make this with turkey sausage and have to replace all the flavors myself, so that's why fennel came to mind! :) Either way, your final product looks soooooo tasty!

Yeah Italian purists need to just let it go. I love when chefs from different cultures experiment with ingredients and techniques to make something new and exciting. Italian nonnas in the 1800s weren’t adhering to arbitrary purist guidelines- they were cooking what they had in a way that they liked! To me, that’s what Camirra does so well, and it’s why I follow her channel!
cooking question. from me . can you cook custard , banana, coconut milk and milk with 3 eggs for 57 minutes and have it solid I used 4 banana . mine was not finished. 350 degrees. little sugar and almond extract. just was use up stuff,.
im not too familar with that recipe. most custard type this i make it pudding. im thinking no though b/c probably need some flour or cornstarch. also i tend to serve mine cold, so after refridgerating it gets more solid

The potato masher fits perfectly into a regular size can of tuna to drain it, and not lose any meat! We use it all the time
