HOW DID YOU NOT PUT GARLIC IN THERE?!?!?! 3) You'll help yourself a lot by adding a little water to your ground spice blend to make a paste. Helps stop it from burning when you put it in the pan. Other than that, super impressed. I'm not vegan but I'm all about increasing my veg intake, may well give this a try :)

You could have added a beetroot juice to give it the red colour that rogan josh has :D But I'd cook it longer to give flavours a chance to develop, in Indian cooking you finish nothing in 5 minutes.

The origin of Rogan Josh is Persian (famous signature lamb dish in Kashmiri kitchen) and it means oil heating very hot…I have heard that the name describes how oil actually separates from the sauce when cooking it long time. I’m just curious what inspired you to call this 5 min vegan carry as ‘Rogan Josh’? 🤔
I’ll be honest guys I’m not sure teriyaki tempeh is right as a side dish to an Indian curry - a fusion too far in my opinion. I think tempeh that’s been marinaded in salt and ground turmeric would’ve been a slightly better fit. Love the idea of teriyaki tempeh, but maybe not right for rogan josh 🙂

Looks yummy but can almond milk be used instead? Or vegan plain yogurt? I can’t use coconut milk as that’s way too much fat for me😭. I’ll try almond milk anyway, maybe with a mix of plain vegan yogurt for the thickness.

This looks tasty and I'm trying to swap out meat recipes for more vegetarian/vegan options. I'm just confused about why you call this Rogan Josh? The choice of vegetables, the lack of onions, the maple teriyaki tempeh... The flavor profile is confusing to me. I'm going to continue looking for a rogan rosh that has the flavors I'm looking for. It looks great, but I suggest being more accurate with your titles.
This is a mockery of Roghan Josh. My wife once made it with Chicken and while it tasted great, I requested her not to call it Roghan Josh unless its made with Beef/Mutton/Lamb.
Don't add the powdered spices first. They will lose their aroma by the time it's done. Add the whole spices first to roast them & powdered spices midway

One could use cashew nuts instead. Soak cashews in hot water for 20 mins, blend with water to make cashew milk and add to the sauce.
