Chip good video man. You just read my mind, I've been thinking about shark fishing from the beach. What pound test are you using on your main line?
You can you anywhere from 40 pound test up, depends on how much drag your putting on a fish and how big of a fish your targeting. I live in Florida and at bear minimum me and my friends use 49 pound

Is the ambassador strong enough for big sharks. It seems more like a fresh water reel to me.
That reel is can only be used for small sharks no more than a few feet in length

Is a 50 conventional reel to big to cast for surf fishing
From personal experience yes, I would go down a bit, but with a 50 wide you could kayak your bait out and drop it with will catch you more of the bigger sharks
Did he say those hooks are mandatory for shark fishing in Florida? So that's the only size hook to be used?

size is up to you but it has to be a non-offset, non-stainless-steel circle hook in Florida myfwc.com/fishing/saltwater/recreational/sharks/
