Blender crashes every time i try to make a wireframe render using the Freestyle option.
Is this a common problem?

It should tells you the error, might be out of ram on gpu, so try cpu render.
The poly count might be high, or the model have problems.
I would recommend having 3x version and 4x version, I run on 3.6 and 4.1 mainly and when having a problem I 90% of the time just switch to the other one and continue.

Could you do a tutorial for how to export your objects as 2d lines (for example a building) and then import it to illustrator to make an architectural diagram with it. Thank you.

You can render it as SVG, there's an add-on inside blender called Freestyle SVG Exporter and with the second method in this video you can mark the outer edges for renders.
You can also just make your diagram inside blender directly!
