Same in our family. At the end of the summer, my grandmother, my mother and my aunts would cook and can for a whole weekend. My dad and grandpa would go to different vegetable stands and get bushels of end of season veggies and the cooking canning started

When i was a kid, my mom always gave me the "dog bones" and I sucked the marrow out. It was so good!! No stores here sell shanks 😢 so i just use chuck roast. I've saved your beef stew recipe and this veg beef soup recipe. Lord almighty. Thanks for posting these. 👍🏻
Oh my, pretty similar to my soup...looks delicious, I put a lil okra in my soups and beans, not a lot, don't want slime....but thanks for the lima bean tip Camirra, will definitely try.

This is one of my favorites. I also add some barley for body about 1/8th of a cup. I have seen some folks use a bit of dry red wine. In all they are all YUMMY!!! I am a real soup person. And my meats are all antibiotic free!!! I love lima beans and another is okra cut in slices for some greens. Not everyone likes it but I do!!
Your recipe is very similar to my grandmother's with the exception of the vegetable combinations, she used mostly root veggies. Ie, Potatoes, yellow yam, chayote, carrot and pumpkins. Your recipe reminds me so much of her soup day which would cook for 6 or 7 hours. She is 99 years old now and doesn't do much in the kitchen anymore. Yes, I do add frozen lima beans to my beef veggie soup. I use chuck roast for the meat in mine. LOVE, LOVE, LOVE IT! Serve the soup along with home baked yeast bread and butter, OH My!
I'd kill for beef shanks just to suck the marrow out of the 'dog bone'. None of the stores here have them, and no meat market within 30 miles. I put cabbage in mine. Small chunks since they fall apart anyway. Mixed veg are fine but I pick out all the green beans. They stay hard and tough. Too lazy to pick and snap fresh ones! I also don't put garlic or all those different spices in either. Just s&p, some garlic powder and onion powder. Tastes good to us. My mom made it this way all my life, so just carrying on. Hubby's mother never made soup in his life except gumbo, so he was a clean slate for all my soups and stews. Growing up, my favorite was Northern beans with ham hocks and cornbread. I'd put a layer of cornbread on my plate, top it with the soup and chopped onions. Heaven. Also her homemade chicken noodle soup, potato soup, split pea with ham hocks and some shredded fresh ham. My mom's beer tips and gravy over mashed potatoes. I still make all these like she did. If it was good then, it's good now. She was an amazing cook and baker.
Try tossing a couple of cloves in the beginning of the cooking process and see if you can appreciate the special note in the final flavor profile. Rutabagas are an interesting addition as well

pressure canning is best for chicken broth. I pressure can in my instant pot max (ONLY the max IP does this, not the others) for 20 min for pints. that being said the Amish will tell you just water bath it for 3 hours lol. and tbh i would eat anything the Amish give me hahah
@@CamirrasKitchen do they have a canner insert for the max ? How much water do you put in ect ? I grew up in southern Ohio and we had a few Amish communities and I would also eat ANYTHING the bake and cook . I am in eastern tn and we have Mennonite community and I buy all my spices there . Yum
no if you have the IP Max (only that version does canning) you dont need any special insert. its just a function of the pressure cooker to also be used as a pressure canner. i add the pint mason jars and add enough water to come up to like 1/4 of the way of the pints. the add the lid and turn on the canning function.

Vegetable beef soup was a staple in my childhood. My mom always used beef shanks, and, sometimes she added oxtails……. delicious!
