I’ve always loved salmon croquettes. My mother made the best, they were always delicious! I remember my mother, grandmother and great grandmother loved them too. Depending on what time of day it was we’d have them with grits or rice with biscuits and syrup (for those who loved syrup) for breakfast. If it was dinner time we’d have fried corn or rice with them. I enjoy salmon patties/croquettes...depends what part of the country you hark from. However, I do leave the bones and skin in because I was taught there is calcium in them. Now, that's the case only if it's wild caught canned salmon. I make fast work of "leaving" the bones and skin, so if some is removed, so be it. The sauté of the veggies is a great idea. Never heard of the potato addition, but I sure get the stretch and I may try it myself.

You were right. The potato makes a difference but you don't taste the potato. But it does give you more to eat. Tell Mr. Young he is doing a great job as always. This was a great salmon patty.

Salmon patties were a favorite of my family when I was growing up. Then as an adult my one sister would make them for her and I. No one in her family liked them. We always had to eat them with noodle roni Parmesan. I hate cleaning the bones and the skin, it’s yuck, but I try to get every bone an skin out , it’s like an obsession. But I love to eat them!

Gina I was brought up making it with cornmeal, but I will try it with bread crumbs. The salmon patties look delicious.🎉
