It's not like they mix dyes into it. It's the layering of the metals that makes the pattern. They're less durable (lose their edge easier) because the metal used is more brittle, more hard, but can be made sharper than a softer more durable blade, so you can cut things like fish very finely. The hardness of the metal used in knives determines their durability, not the "colors mixed in" lmao. These knives are great for cutting stuff with great precision but you don't want to use them for butchering, they'll lose their edge faster.
Experienced with knifemaking these don't tale years more like weeks. The pattern comes from different steels with different amount of certain metals in them. The shiny steel usually has a higher amount of nickel, and the other has less. Edit: I hadnt gotten to the part where he explains that

I got a 100 layer damascus broadsword that took a few months back when i was younger and less experienced. I genuinely dont know why any knife would take 2 years. Hell the THOUSNDS of layered Japanese Katanas made before power hammers only took a few years and they are 10 times the difficult, 5 times the mass and made by hand. 69 layers is pretty mediocre for damascus and yes, it produces a bolder pattern so it makes sense for production kitchen knives to be lower-layer...still, 2 years?
