Hey there, French here and a big fan of lentil salads obviously, however i usually take it simple (no added cooking, just raw shallots for ex). And oh my god, taking the extra time to cook the shallots takes it to another level + the pepper in the water is a genius idea! I used beluga/black lentils and undercooked them a bit so they stayed firm, and i think this is by far the best lentil salads i ever had. And trust me, i had a lot! So thank you

Could you maybe give us a video on your knife skills? I have none, always use a super little knife and I would like to use a big, sharp one like you. Could you maybe tell us which one it is and how to sharpen it and those kinds of things?
Turkish red pepper is Aleppo pepper also called Armenian pepper. You can get it at any middle eastern shop. I never added salt to my lentils whilst cooking as I was told it will make the outer skin "too crunchy". I salt it after. So I will actually try to make it the way you do to see if there is a difference in texture.
Onions can be put into a fridge or into a freezer for some time before cooking to reduce the lachrymator - the compound that irritates the eyes. I normally put an onion in the fridge on the morning when I know I will be using it for cooking during the day, but around an hour is enough. The freezer is good when you have less time - 10 minutes should be fine😀It really works!

Lol I love the glasses. I can salsa and I have to chop a ridiculous amount of onions. 20 cups at a time!!! I have found that if I ser up a fan blowing on me I don't have any problems!! No tears!! It also helps keep any fruitflys away. I freaking hate fruitflys.
I love lentils... they're tied with chickpeas/garbanzo beans for me. Plus they're both relatively inexpensive if you buy them dry and in bulk. Costco in my area has some nice offerings from a great company called Khazana - The Treasure. My fav is probably the Masoor Malka (Split Pink Lentils) because they cook up so fast, like 3-4 minutes in the pressure cooker which is the exact same time as carrots, potatoes/sweet potatoes, and basmati rice so it's great for making one pot meals.
When i first found this recipe a couple of months ago I made it three weeks in a row and shared it with so many people. It is amazing and I'm making it again this week!

Personally I love the fact that lentils help us in getting optimal sleep, which is thanks to the good levels of folic acid in lentils! Another amazing benefit is that folic acid helps in counteracting "telomere dysfunction" which means that lentils are "anti-ageing" hero!

Made my own variation of this with minced walnuts instead of pine nuts (didn't have any) and tomato paste instead of chili flakes (they'd kill my colon) and it was amazing! Thank you for your wonderful idea.

@RainbowPlantLife There is a little tip how to cut onions without any tear: don't cut the root end! So basically keep the root end, and cut the stem end. Instead of slicing from the root end to the stem end, try slicing the other way, from the stem end to the root end. Works every time :) Hope this will help!
What a coincidence, made this recipe today for a BBQ with the houses from my street and they loved it! I loved it the first time I tried it from the recipe on your website a while ago
For those that don’t have onion goggles - and I did not know that was a thing! Hehe - onion chemicals are drawn to the closest moisture (which is usually our eyes) so if you put a wet paper towel or sponge close to onions when you’re chopping them the chemicals get drawn to it instead.

Your flavors will win every time, I am sure, but we would get more of your fun personality and big-flavor vegan cooking.

My conclusion with lentils, They sound like a great dietary choice, but the weight loss comes from the cooking process. You also spend $200.00 per lentil meal to buy all of the other spices, fruits and aromatics needed to make any lentil dish. Plus you might find a rock in your food.

I, too, heard never salt you beans prior to them softening or hard beans for you. Will have to try your suggestion.
