I just love your small batch recipes! It's just me and hubs and he doesn't like to eat much at all. If I make a regular batch of muffins, I certainly can't eat them all in a couple days, and I don't like frozen/defrosted bakes so they end up moldy or stale. I've tried halving or quartering recipes but it doesn't work very well so your channel is just what I needed! Thank you so much!!!!
So glad you found me. I agree with you on frozen and defrosted bakes, they never taste as good, not worth the calories. It does take a little experimenting and trail and error to reduce down recipes but that is why I'm here and I'm glad you are too!!

He’s such a good sport👏 I love looking up recipes and one of my favorite recipes are from your small batch recipes This blueberry muffins were sublime and yesterday we made your small batch baked zita also so good.
Made these this morning & they were amazing! My first time ever making blueberry muffins from scratch & they came out perfectly. Nice & tall, fluffy & super moist! Great recipe. Thanks for sharing! ❤
I just made 4 blueberry muffins but didn't have sour cream or plain Greek yogurt but I did have Chobani mixed berry yogurt 😊so I used two tablespoons of that...looking forward to eating these muffins full of fresh plump blueberries...Thank you dear ❤
These are amazing....as usual I replaced the milk and eggs to make them plant based. Worked out just fine. I sure hope you are ok down there in the storm/flooding. Be safe. 🐞
These are by far our favorite blueberry muffins. So much so, that I printed and laminated the recipe for new brides and gifted it with measuring spoons and cups and a 6 c muffin pan(which are not easy to find)!
All late, just found this recipe. I made them but used half and half (didn't have milk), yet they were amazing! It took me longer to cook, before my family devoured them. I am ready to make more!!! I took Culinary Arts, quit because I hated baking and couldn't get anything right. Well, I did it!!! Thank you, very easy to follow.

Could just be me, but I would add a bit more sugar to the muffin batter. Otherwise the batter and streusel topping were good. But I got 5 muffins out of this recipe. They rose nicely, but I think I could have managed 6 muffins because they initially spread and joined. Leigh Anne, is your muffin tin standard or jumbo? I might try using my jumbo tin next time. Thanks for the recipe!

I use regular muffin tins but I fill them clear to the top
