The cookies were heavy because there was no baking soda in them. They had nothing to make them rise. Brown sugar substitute was fine because most Ginger Bread cookies are made with brown sugar. There was so much missing from the recipies.
anyone else think they might've used self-rising flour on Shroom Shroom, for a worse-tasting but simpler and fuller-figured gingerbread fella?
im proobably wrong, but would baking powder also work, because its a rising ingredient (i dont know the proper term)

No, it's the other way around. Baking powder contains both acid and alkaline. Baking soda does not, so it requires acid.

As an experienced baker, I laughed so hard I peed a little at the sincerity with which Jarvis followed the Troom Troom recipe and seemed genuinely shocked that it came out inedible. I am sure Jarvis would be equally amused watching me follow an incomplete coding tutorial. 😂

Also didn't he use brown sugar instead of white sugar? That by itself wouldn't ruin the recipe, but it does change it substantially. I've never made gingerbread cookies so I don't know which it genuinely calls for.
Still, the whole thing was doomed because I do know it left out some important parts in gingerbread cookies, like any kind of leavening. Even if he followed it perfectly, this would be a gingerbread cracker.
@@go-away-5555 actually brown sugar isn't a bad substitute here. A lot of gingerbread recipes use it instead of white sugar. The biggest thing (which he mentions at the end of the video) is the lack of molasses. That's a big reason behind the color.
I assume the honey was meant as some sort of weird substitute. What I can't wrap my head around is the mentioned lack of leavening agents or melting the sugar and butter. There's recipes for baking that use melted butter but things like this you beat them together until its fluffy and then continue adding ingredients, melting though?

I microwave the plastic honey all the time it doesn't melt before the honey is soft. It softens a little if you over due it.

@@urbanmonkey48 you can microwave honey lol, don't worry. the only time you need to worry about its state is in baking and why it's included. like with butter - melted butter doesn't work the same as softened since you'll typically use softened to cream with sugar, which can't be done with melted and will greatly affect the end result and crumb. most people who microwave honey I assume is because it's near the end and crystallized like Jarvis' or want a softer liquid honey but only have creamed.
nothing bad will happen if you microwave it aside from it being in too long and bubbling over and becoming too liquid-y, creating a mess to clean. just check the bottle if it's microwave-safe (lots of plastic these days is fine for this which was likely his case). it's best if you can put it in a bowl first as to not mess with the whole batch' consistency thereafter, but it's generally fine, especially if you are only warming it for like 10-20 seconds.
The absolute funniest thing troom troom ever did was when they found out Danny Gonzalez made a video making fun of them so they made a new character just to slander him

As someone who loves to bake and bakes a bomb ass gingerbread, I personally know it wasn't the fact that he used brown sugar. Brown sugar is actually the better of sugars to use for gingerbread, and the issue he had was either, not kneading enough, using all purpose instead of self raising/plain flour+baking soda or honey. Honey has never been in any gingerbread recipe I've seen so that part confuses me. Just thought I'd put this because I've seen a lot of comments saying about the brown sugar.
Edit(I just realised that they used honey as a replacement for what would normally be golden syrup, but again this is strange to me)
Honey is okay ingredient, though it makes for "heavier" ginger bread. They missed on baking soda though.
In the US we don't have golden syrup (though we can get it imported), but I have never used honey for gingerbread.
That's because troom troom is based in ukraine/russia and because they don't have an easy access to something like molasses or golden syrup in their supermarkets, they use honey instead. I'm from eastern europe myself (use a lot of russian/polish recipes in my cooking), every gingerbread recipe I've ever read uses honey in them

Late but are you supposed to knead gingerbread? And if so, doesn't that make it more dense? I bake but never this kind of stuff. Kneading is integral for yeast-based goods but your goal isn't building a strong network of gluten when it comes to things like cookies, cake, muffins, etc. Overmixing always leads to dense bakes even if they have leavener so I can only imagine his results lol. It makes sense to knead the type that will be used for gingerbread houses but idk about gingerbread men/cookies.
Terrible recipe all around, though. I also have no clue why they told the viewer to shoddily cream the butter/sugar when it was just going to be microwaved anyway.

Dear Jarvis,
Use softened (dairy) butter, 50/50 brown sugar and 50/50 white sugar. Do not melt! I do not recommend honey, but use maple syrup instead. I saw they used cinnamon and gingerpowder, but forgot baking powder, nutmeg, allspice and clove powder. Also using a tiny pinch of salt is recommended.

What a great video! so fun! Your gingerbread men were impressive - you have baking-talent. The murder-man you made 2nd was extra impressive. Really, really enjoyed the video, thanks Jarvis, Vanessa, and anyone else involved behind the scenes.
That recipe is trash so it's not your fault, but for future reference: A cup of sugar is 7 ounces. A cup of flour is about 5 ounces. Don't put the plastic honey bear in the microwave because its plastic isn't heat safe and potentially toxic. You shouldn't knead gingerbread dough or any cookie dough really (develops gluten and makes them tough). The darker color for gingerbread usually comes from adding molasses to the dough. Also, I've never heard of Troom Troom but now it keeps appearing in my recs, THANKS JARVIS.

They gave ounce measurements and he used cups? LOL Maybe if he'd weighed the ingredients out like a normal recipe would expect you to do it might have worked better. Cups are not a very accurate form of measurement and baking is a science involving precise measurements.
No this recipe didn't work because the recipe is wack. Ther is absolutely no levener in this recipe [baking powder or baking soda] and you should not be putting honey in a *gingerbread* cookie recipe.
They COMPLETELY left out ground cloves, allspice, nutmeg, salt, molasses and so much more. Even the icing is wack. Royal icing is just powdered sugar and eggwhite, no lemon juice or water is needed.

Michelle Howrad water is used for a stiffer royal icing and lemon juice gives stability to the egg whites. The royal icing was the only normal thing in the recipe. Second it’s leavener and baking soda and baking powder aren’t the only ones. And also measuring baking products in weight is much more accurate as the one person said but it is not required.
Dont forget he used brown sugar when the recipe called for white sugar!
