I just made this today and for those of you with a gluten sensitivity like me you might want to know baking with organic einkorn flour gives me no issues. Einkorn flour is the original wheat, easier to digest than modern wheat, and it's never been hybridized. I made this quick bread using einkorn flour and followed the recipe as written, except for the coconut flakes on top because I couldn't find them in the store. Minor adjustment with extract, I used 3/4 teaspoon of vanilla extract and 3/4 teaspoon of coconut extract. This bread is delicious. This goes into my baking rotation.
I live in Trinidad and Tobago and this is very similar to our coconut sweet bread...except we add candied citrus peel and raisins to the mixture. Always great to eat👌👌
Stephanie, I absolutely adore you're channel and it's truly remarkable how long you've been running this channel for! Your recipes are great and I wish you the best of luck with future endeavors :)
Hi Stephanie. I'm from Kerala, and love all things coconut. This was a unique recipe from you. Looks out of the world. Adorable Carrie seems to remind you that it deserves the first slice😊. You're giving me plenty of 'show-off recipes' , and I will do so this weekend! Thank you Stephanie.
I just made your recipe and it's so good. Made my house smell wonderful too. I love coconut so I added 1/4 tspn coconut extract on top of the 1 1/5 tspn vanilla extract and it was just right for me. I totally agree that using unsweetened coconut milk and flakes was perfect. The bread has just the right amount of sweetness. Thank you so much for sharing it with us. It's also my first from scratch bread I've ever baked. Looking forward to more of your recipes.
I just made this bread with high altitude adjustments because I live at 7,000 ft. in NM - the aroma in the house while it was baking was heavenly. Great recipe!
Thank you dear Stephanie with all my heart you surpassed all exceptions & I can’t thank you enough. You are just FAB & BRILLIANT! 🌹😻 God bless you with good health & more success..
When I see... Stephanie baking without stand mixer or electric beater.... I m in my kitchen trying her wonderful recipes ❤️❤️❤️❤️ Thank you sooo much Stephanie for teaching me baking... I have made your Brownies and banana bread many many times... Lots of love from my whole family 💞
Stephanie, I am always so enamored with your presentation and tips. Thank you for suggesting that we slice and use perchment paper between slices to freeze; that's a brilliant tip that will make it easier to slice quick breads and enjoy in more reasonable quantities than I might be enticed to do otherwise 😁
Yes! This looks very similar to West Indian coconut sweetbread! Stephanie; I know you live in Canada where there are a lot of West Indians living! And I bet this and perhaps some of your other recipes have that West Indian influence someway somehow! Yum-oh!
From Sri Lanka, we always use coconut to prepare our main meals and various other recipes but never used to make bread according to my knowledge. Thanks for your recipe. Stay safe.
Yum. I love coconut and I think some kind of nuts, like toasted slivered almonds or maybe macadamia or pecans would be good. I love the idea of slicing it and putting parchment or wax paper between the slices. I’m celiac and would probably have to freeze some of it and take some out to eat later.
This video inspired me to make this today. It is simple to make and oh so good. Thanks Stephanie for posting the recipe. I also added slivered almonds, coconut extract and used coconut milk too. I wonder if adding crushed pineapple might be another good addition. More like a Hummingbird bread/Cake type bread. Deee-lish. Two thumbs up.
My husband’s birthday is coming up in January, and he loves coconut. I’m going to try this! Came looking for a basic recipe that I could adapt with coconut flavor using the methods from Cook’s Illustrated cookbook’s coconut cake, which is mind-bogglingly delicious. I DREAM of that cake! If you love coconut, I highly recommend it!! BUT, it’s a huge cake and very rich (the coconut buttercream will send you into the stratosphere), and we just can’t eat that much cake, lol. Plus we’re trying to lighten up after holiday decadence. I think coconut extract and cream of coconut (this is the sweetened stuff that’s used in pina coladas, Coco Lopez brand for example) are the things that give so much flavor to the cake, so I think I’ll just add that to this recipe and maybe cut the sugar a bit. I’m also going to try making it as muffin tops! Had great success baking a cranberry pumpkin bread recipe in a muffin top pan. Each little cake is so perfectly moist, and a perfect serving size. Can’t wait to try this! I think the coconut shreds in the batter is going to give great texture! Thanks! 🥥🤎🤤
I have to try this recipe. My husband loves loves ❤️coconut. And I know he will love this bread. Thank you Stephanie!! I’ll let you know how it came out. ❤️😘❤️
I have quite a lot of unsweetened dried coconut, and I definitely want to make this bread with it. Thanks for the recipe and demonstration. Simple is the best in my opinion.
We love to incorporate anything coconut into what we eat like coconut rice, coconut cake, braised chicken in coconut milk and of course coconut bread which is pferfect for breakfast and snack. Joy, we will try your recipe. Cheers, Domenico.
It looks sooo yummy😋😋😋 gonna try this.Thank you so much for sharing this recipe.i made a lot of your recipies and it always came out perfectly👍🏼.God bless you always
I was planning on making coconut macaroons but I think I’ll make this bread first lol. Sprinkling icing sugar on top like you said on your website, also sounds like a good idea. Tfs, Stephanie. Stay safe.
Good morning Stephanie!!!! Thank you for all your recepies, and This coconut 🥥 bread 🍞 😋 😍 My husband will love you lolol He loves ❤ coconut U are so sweet and great 👍 👌 💕 I love how you explain to us all. Have a wonderful day.
Hi Beautiful Stephanie 💜 YUMMY!!! I would love a piece. You are so creative and Blessed 💖 i love all of your recipes and I love you 💕 God Bless you always!💜
Hi Stephanie. I didn’t quite catch your surname - Jorisky? Anyway I came on looking for a coconut bread recipe. I’m going to muddy it by using strong bread flour, yeast, and coconut oil, and also I’m going to make small oval 50gm rolls to have with morning coffee, rayher than a loaf. Anyway I’m signing up because your presentation is so charming! Best. Ian
Hi Stephanie...I love everything made of coconut so this is my next thing to bake.looks so yummy..I loved the way ur bread rose so nicely...can I use dessicated coconut in place of shredded one?
Every recipe I tried of Stephanie's turns out really good, Stephanie and the hillbilly channels recipes are honest, some of these videos some people do are fake, Stephanie you're are the Best thank you
Hello Stephanie Sound delicious. As I have low tolerance to wheat, I usually bake with either rice flour or oat flour. So wondering if for this beautiful bread, can I do the same? Please let me know. Sohaila, Your fan from london.🥰🌹🥰🌹🥰💐🐶
That looks like a perfect afternoon Tea Time Bread. Sincerely Yours 🤠 Mr Severance, "The Cake 😋🍰🥫🎂🥳🎈🎉 Man", "World 🌎🌍 Cruiser"&"Succulent Collector"and"Cup& Saucer Set's and Teapot 🫖 Collector".
Stephanie we make a lot of this style of baking with coconut also every house has a few coconut trees growing in their back gardens. I just want to try o suggest it would be much nicer instead of using cinnamon to use cardamon either the seeds crushed and bruised or powder ed version. Just has to be sparing with it it is much nicer than cinnamon. TQ.
hi steph, thank u for all the videos & info, very very helpful indeed. I hope u can help us with our dilemma, recently we got an air fryer "oven" with three tray shelves, it's heat plate is from inside top, like a broiler, no hot plate at bottom or grill. struggling when making the sandwich bread loaf, as it seems it heats & brown the top while bottom & sides still white & not done at all. I tried to take the pan half way & filp the loaf upside-down, then I repeat the same for each side. it is uneasy & a haste to say the least. I can't cover the loaf pan with foil as it rises as it is heated & also aluminum is not healthy. what do u recommend we do? Thank you 🙏🙏
The heat needs to come from the bottom or the back if you have a fan. If it comes from the top you’ll have problems. I know of know solution to the problem with the oven you are using. If you can return it I would.
That batter looked so good I just wanted to eat it with a spoon. You doggie wanted some too. 🤣🤣🤣 I bet cream cheese would be delicious spread on this as well.

Candied citrus peel sounds pretty good.
🇹🇹🇹🇹🇹🇹🇹🇹🇹🇹🇹🇹
Yes it's similar to sweet bread, I'm also from Trinidad 🙂
Yup! So similar to our Barbados coconut bread. I like it plain without the added fruit. Nothing like a slice and a cup of tea.
I love how the way , You really put in so much detail with measurment and size of the baking tray and quantity ..thabks
Stephanie, I absolutely adore you're channel and it's truly remarkable how long you've been running this channel for! Your recipes are great and I wish you the best of luck with future endeavors :)

Thank you Stephanie.
Really like the tip of flipping over the oiled parchment. Thank you for doing all of these for us. So delicious, all these desserts.
I swapped the butter with extra virgin coconut oil for a more intense coconut flavor. Great recipe ❤️
I just made your recipe and it's so good. Made my house smell wonderful too. I love coconut so I added 1/4 tspn coconut extract on top of the 1 1/5 tspn vanilla extract and it was just right for me. YUM! Thank you for this and EVERYTHING! You are so good at all you do and always gracious to share with us! I really appreciate you!
Love the tips on preserving the bread
So I just made this with sweetened coconut and cut the sugar down to 1/2 cup instead of 3/4 cup, and it's not too sweet at all. I think it's perfect!
Yum. I love coconut and I think some kind of nuts, like toasted slivered almonds or maybe macadamia or pecans would be good. I love the idea of slicing it and putting parchment or wax paper between the slices. I’m celiac and would probably have to freeze some of it and take some out to eat later.

I immediately thought pineapple as well. That would be a great addition.🍍
I also love coconut desserts, and this is a perfect recipe! Kiss from Giulana, Rome, Italy

It is a canned liquid, and is often found with other international foods.
