Hi, thanks very much for the best ever Coconut Bread! The first time I didn’t cook it long enough but it was still great, 2nd time left it in 30minutes @ Gas mark 6, turned out light and fluffy! I used the quick method! It will keep in the fridge for a few weeks, if you wrap the pieces in kitchen towel the in cling film and into a sealed bag. Best of luck!

I used a mix of flax and psyllium husk. Usually, my coconut recipes have an odd bitter taste and I wasn’t sure if it’s a baking powder/soda reaction to my baking pans and non-stick and silicone. I used parchment this time just in case. No odd bitter taste. I may reduce the honey to 1/2 tbsp next time. I topped the bread with everything but the bagel seasoning-delicious! I have made this twice and the third time is in the oven now. Never pourable like in the video. I added enough almond milk to make it pourable and probably still won't come out right. Can you suggest what I might be doing wrong? Thanks. 🙂
Hey Denise, I replied to you above already. But I wonder if your other ingredients (almond milk, eggs) were cold and made the coconut oil and the rest of the batter solidify in the blender? Maybe try the bowl method next time instead
Just tried it, wanted more so I doubled the ingredients. I found that it was a bit thick so I added more milk gradually to bring to the consistency needed before I added the egg yolk. I topped it with sesame seeds and nutritional yeast. Anyways, it was DELICIOUS!!!!!! Wow, so quick and taste so so good!!!

You'll have to test it out and see if the eggs sit well with you. Every body is different so it is hard to advise. It sounds like your oven is in Celsius. Then the baking temperature should be 190°.
It is very good, I can easily eat it as bread, but a little bit sweetened, it would make a tasty "pound cake". I would try with egg whites only, to avoid the eggy taste. Anyway, a very satisfying and filling bread. I would also mix in some nutritional east for a little bit of yeasty taste. I used yellow flax, next time I would use black ones for a more earthy taste. Please be careful with flax meal. It can be poisonous when "opened" like being crushed. It also oxidices very very fast. Like within hours after the shell being broken. There is plenty of information about it online and my country even advice people not to eat it at all. Kind regards
Hi, I make coconut flour bread every week. If you have a powerful mixer, you can mix whole eggs into fluffy texture, add other wet ingredients into it, then add the mixed dry ingredients. It's less time consuming. I prepare 3-4 batches of dry ingredients in jars. It makes it very easy to make bread when I am tired.

First time separated the eggs it turned out gd. Second time used the blender method and added chia seeds instead of flax and it turned out cakey. Also without adding any salt it was very salty. 🤔 Any insight on this? Thanks!

So I should have just made 1 loaf to try it but I made two. The batter was a little thick so I thinned it out using a bit of heavy cream (I used this in the recipe also). The end result was that the loaves didn't rise and the toothpick came out clean but they weren't cooked in the middle (and caved in). How would I make it rise more? Use more baking powder? I believe so. Use a setting that stirs/kneads and then immediately bakes since there is no rising time in this coconut flour recipe. There should be a quick bread/cake setting that does that

must be the bicarbonate of soda? 2 tsp is quite a lot so the taste probably came through

What is a good replacement for the flax meal? It must be low/zero PUFA.
I don't know the PUFA of these, but other reader have reported using chia or psyllium husk as replacement
