I took the time to make this for my wife on valentines day. It turned out amazing. The main point of difficulty for me was my circles for the ravioli's were a bit small. so it cause a few of the yolks to pop while crimping the edges, which quickly became messy. Next time I will make sure I have larger circles. I did put the ravioli over a slice of heirloom tomato, and topped them with a pine nut brown butter pan sauce. This one is going into our recipe rotation for sure! Thank you very much for the beautiful video and tutorial!

I made these ravioli today :) they were good, but.. Whenever I try to make ravioli, the pasta at the ends where it's sealed ends up really tough and chewy - almost rubbery (and my sheets were definitely thinner than the ones in the video - I used a pasta machine). Any suggestions? Thanks

I fear the ricotta might be too mild/watery and that it won't go well with the egg yolk alone Have you got any reccomendation?
This is beautiful, and I want to make it. Sadly, I can’t eat garlic (as much as I love it). Can you recommend an alternative ingredient to mix with the ricotta? I know it can never be a sub for actual garlic, but there must be something (duxelles, truffle, herbs) that would make an almost equally delicious egg ravioli?
@@Sunroc Thanks for the suggestion! I’ve actually been buying them in bulk lately! I don’t think they are a great substitute for garlic, but I’m willing to give this a try. I find shallots quite mild. I’ve been making a lot of fried shallots (Taiwanese style), and I think those could be a somewhat decent substitute for roasted garlic. If I try it I’ll also try to remember to report back. 😊
