I’ve also seen a chef dust the grayer with flour after the first few strokes of graying the butter. Keep the paper on the stick at the very end so your fingers don’t touch the butter while you grate. And you can roll the stick in flour for easier grating.
I have been practicing making biscuits for many years. I made this recipe and the only thing I had on hand was King Arthur bread flour, and it was not self rising flour. These were the best biscuits I have ever made. I followed you exactly and the bread flour put these biscuits over the top. @Wild Andes: NO! That is NOT Chef John's recipe (which she mentions at the beginning)! The REAL recipe calls for 7 tablespoons of butter (although 8 would be just fine), and far more importantly ONLY 3/4 cup of buttermilk! You'll have something closer to thick batter with a cup of buttermilk. Try adding a teaspoon (or even a tablespoon) of sugar to the recipe.
1st time making biscuits and have made them several times since and even have frozen them and baked them and they taste so fresh and delicious. This recipe does not disappoint. Husband says they are the best biscuits he’s ever tasted! Highly recommend for the biscuit pros or first timer! They will turn out amazing if you follow the instructions.

I'm 50, I started making biscuits. With my dad when I was eight. It was our Saturday ritual to feed the family. Over the years I've taken his recipe and tuned it to what I like. I don't measure anything. But I always use frozen butter in my recipe. I always have people ask me for my recipe. I always tell people can't tell you. But will be more than happy to show you. You have to know how a biscuit mix should feel. It'd how it feels, it's how it looks. I can tell when they are done just by how they smell in the oven. You're tactics and mine are extremely similar. My mother and grandmother made the best biscuits. Both being from Alabama. I'm not sure how they did it but they would put flour, salt and I guess baking powder in a bowl. Make a 'well' in the center and using their hands would form a biscuit. So good! The biscuits were soft, tender, flaky and so good.

I’m very thankful that hubby found this recipe and YES, you explained it so very nicely! This is not at all a complaint as ours came out overall deliciously awesome and is just a heads up to anyone so they don’t experience near the same issues-I just had to do a few different things. We’re here in Texas and not sure if today’s humidity played a part here but after keeping the shredded butter in the freezer (for around 15 minutes), it was not at all very crumbly but I just didn’t blend it too much. Also, the dough was quite sticky so next time I won’t be as skimpy on the flour. I did not have buttermilk but only powdered nonfat skim milk but added the 1 Tbsp of white vinegar that sat for quite sometime and I didn’t notice it to curdle, but followed the advice of many with those 2 ingredients. I also ended up baking them a bit longer than 15 minutes (not sure if because of the buttermilk substitute, etc) as they were not yet formed by 15 minutes. This is, however, by far the best biscuit recipe I’ve ever found and now I can also work from experience, thank you Nicole! 😊

I have never - NEVER - been able to make a biscuit worth eating, and i can't tell you how many recipes I've tried. This one? Oh, my! I have, for the first time in my life, made yummy biscuits. These are great! The only thing I do different is that I don't have a biscuit cutter, so I just use a knife and make square ones. So, so yummy 😃🥰

This biscuit recipe is so good!!!! I just made it right now! You forgot to add the butter and buttermilk measurements, so I just put a stick of butter, and a cup of milk. It turned out delicious! I make up 3 recipes with butter and butter flavor crisco shorting, work it in as call for in recipe. Then put it in a seal container and put in my freeze. When ready to make my biscuits take out the amount needed for the number of biscuits I need and add buttermilk and mix them as per the recipe. This way you can have them in half the time and mess.

We just found out my husband has parkinson's and I may have fibromyalgia. SO.... of course the best diets for these diseases is vegan vegetarian. It's not too hard to give up meat, but one graduation at a time. Love my dairy! For us, we have to cut down for sure on that too. If you could show how to make different vegetarian meals it would help immensely AND I guarantee you will get more likes and subscribers. I found that spraying the inside of the grater with non-stick spray helps to not have the butter stick on the inside. Yummy! Biscuits

This recipe is really good, We didnt have a cutter so used a knife and made squares. They were very moist, flaky and super easy to make
