Oddly for the US, I grew up with a group Lebanese/Syrian farm families who for whatever reason immigrated to central Nebraska between 1880 & 1920. I miss some of the dishes they’d bring to community gatherings. Wonderful lamb dishes.

Sorry I disagree I only need to see that your meat is stringy to know that you've overcooked it of course you want it to be off the bone and soft but once it gets stringy it's been over braised
