- Loaded Twice baked potatoes that will have your taste buds singing for more. Packed full of flavour creamy cheesy and delicious. These loaded potato skins can be eaten on there own or as a side dish to any meal. Oven baked potatoes super tasty
Ingredients
4 Medium or large Potatoes
1/4 cup cream cheese ( flavoured with garlic and herb or other)
1 large tsp sour cream or creme freche
1 spring onion
200 grams of Strong cheddar cheese ( leave 100 grams for the top)
bacon bits optional
salt and pepper to taste

These look and sound perfect. I love you tip on scoring the skins before cooking, super idea. It is going on a little list of tips we keep on the cupboard door until it is ingrained in our brains.

Thanks Rose, we did have a great weekend. BTW didn't make twice baked potatoes but just had some in their jackets and used your scoring method. Works like a charm. Crispier skins edges made a nice difference.
Helen doesn't eat the skins so she scooped out the potato and gave me the empty jacket. I put a little homemade ranch salad dressing on it. They were perfect.
