8:19--Just for clarity..when you pointed out that the Amish had "lined up" the Zip Sheathing on the gable wall, that should've been staggered or something right? or should it have been horizontal? Maybe you'll elaborate later in the video and I just haven't seen that part yet.
staggered is right, it does not need to be horizontal in our jurisdiction. Applying horizontally would have caused a lot more solid blocking and thermal bridging in the wall, the sheets are made at 8/9/10ft lengths to be applied vertically to walls of those heights
Termites are certainly present here but that doesn't warrant a full floor of block, it's cheaper and easier to just treat for termites and/or keep any wood 8+ inches from grade. Florida homes typically use block to meet wind load requirements.
The forces during building are often the most stress on the project.

I would have made the first floor out of cinder block because of the termites in Florida, maybe they don't have that problem in Pennsylvania

Nope, blocking is a 2x8 flushed to bottom side of rafter, rafters are 2x10
