- The secret on how to make tomato sauce isn't just fresh tomatoes, but good technique. The best part is that this tomato sauce is extremely easy but is also surprisingly quick to make. So now you can have your homemade tomato sauce on all of your favorite types of pasta, and brag to your friends because you make the best tomato sauce ever.

Ingredients you'll need:
First Variation:
4.5 pounds (1.8kilo) fresh roma tomatoes
1/2 cup (125ml) good extra virgin olive oil
sea salt to taste
Second Variation (Amatriciana-esque style) *this gets added to the simmering tomatoes instead of that 1/2 cup (125ml) of olive oil:
1/4 cup diced guanciale (75g)
2 sprigs rosemary
1 clove garlic lightly crushed left whole see notes
1/3 cup extra virgin olive oil
*notes on garlic*: I use only one clove because it's flavor needs to be very subtle for this tomato sauce. You really want the flavor of the tomato to shine through for the majority of the flavor. Authentic Italian flavor uses garlic in moderation and in subtlety. - Навчання та стиль

cook like most have things you have to do tho some is pretty simple and patence and waiting is key mostly to the "fancy" part is the presention which is optional duh
@@M4TTYN as an amateur cook, to get to a decent recipe and plating I have to make the dish at least three times, which means eating terrible ideas for a couple of days and then Instagram it at the end of the week when I nail it. I mean, look at Babish, he fails recipes all the time and shows a couple of them in the video, not counting off camera tryouts.
Most Chef don’t cook for them self nice good food, My go to food is steam rice with some kind of meat, I always have spam, sausage and beef! That’s what I go too eat for my self
cook up a lot of fancy and spread it out over the week. tomato sauce being a great example.
my own tips for easy meal is just having rice on my hands at all times and cook slow cooked dishes to put in the freezer for like... 10 days. i've had slow cooked stew for a week before. when i get bored i just pan fry fish or chicken breast because quick and easy, or fry up some eggs. i don't have to think about what to eat or spend energy on cooking them, so that's a win.

Little tip if you like parmesan : keep the hard skin of the cheese, and put it in your pot when you cook tomato sauce.

aberreg great idea. Love them in stocks and soups too. I like to make a parmesan broth for amazing risotto.

I'm italian and i literally love the way you know and do italian recipes, knowing different types of pasta, tomatoes and even the difference between "pancetta" and "guanciale". That's so inpressive for an English/American (dunno where you are from). It's evident how much studying there is behind your work and videos.

As an Italian chef, I'm really happy to see someone that tries and succeeds in understanding the local taste of something, Italian tomato sauce it's the most bastardized recipe in the world and Italy itself, few restaurants do it right.
I followed this and really loved how it turned out! The only things I did differently was add like a million whole garlics. Then at the end I used an immersion blender to make it really smooth and it was amazing. It was SO easy to make too. I will definitely make again.
Dude, i'm italian and i learned a couple things with this video :)
A couple tips for different variances of tomato sauce:
1. Before cooking the sauce, sauteè some shallot or garlic (one ore the other).
2. You can do a cherry-tomato sauce without peeling the, just cut them in quarters, sauteè some garlic and than TOSS THOSE LIL MF in the pot/pan an let them cook for 30 minutish (use your heart to understeand when it's ready)
3. If you want to take off some of the tomato sourness add some sugar an a super tiny pinch of sodium bycarbonate (not too much or it will seriously SUCK)
4. USE SOME FU***NG BASIL in the tomato sauce (not in the amatriciana), like... A LOT!

I hope I can find some decent tomatoes so I can try this! My mom and I always made our family recipe similar to this, but we always had this grinder thing, which I loved when I was a kid. :) We always used basil, no oil, and usually cooked meatballs in it. This would be a nice, different addition to mix things up now and then. And...I *just* bought a rosemary plant yesterday. :)
I made the first variation of this sauce with all the excess tomatoes from my veggie garden. It was really good and I would totally cook it again!

This looks like a really great simple tomato sauce! One tip though (not a must): In italian tomato sauces you often see this weird „half mushy but not quite chunky but still rustic but still smooth“-ish consistency (you‘ll understand once you had it) and the best way to achieve that is to crush the peeled tomatoes with your hand rather than dice them, then continue to follow the recipe as you described it. As I said this is not a must but definitely worth trying. If you like a few solid tomato chunks between your smooth sauce you‘re better off following this recipe as some of the cubes will retain their texture (as you can also see in the B-roll), it‘s all up to preference!

I love a simple sauce recipe. I grow several verities if heirloom tomatoes and make sauce at the end of the season. Pretty much just substitute the tomato’s. Comes out good, often a bit sweet, depending on the verity.
Anyway, would love to see how you’d use them.

OMG! I am also one of those people whose life was changed by marcella's Onion and butter sauce. I've taught it to so many people. I'm like an evangelist of that sauce. Also that cookbook as well. I learned how to cook with that cookbook. I mean it's specific for Italian cuisine, but there is so much technique packed in there and the directions are so clear and concise. You can't fail with it honestly.

Marcella Hazan IS the bible when it comes to Italian food! Follow her recipes religiously, and your food will taste the way it actually does in Italy. No one else has ever, ever come closer. Batali is very good (for American-Italian) Giuliano Bugialli is very good with regional Italian recipes, but no one comes close to Marcella for technique, ingredients, and ACTUAL dishes. May she rest in peace.

NGL about a quarter cup of white wine or 2 tablespoons of balsamic vinegar might give this recipe just a little bit of extra Something.
Weird tricks aside the hands-down most powerful approach is probably Serious Eat's 3 type of tomatoes 3 types of sauces one, though it's probably also the most labour-intensive.

Additionally, sometimes your tomato sauce can be slightly sour, if you don't like that (what's wrong with you?) then add a tiny pinch, and I mean a TINY PINCH of sugar, to balance that sourness out.

I’m retro sure if someone took this exact dish, put some tomato paste in it, it’d still be a pretty good tomato sauce. Who cares what someone else does, no ones forcing you to eat it
