One of the best all around grill and smoker I ever owned here: bit.ly/3mmLqod
Are SIRLOIN FAJITAS and ARRACHERAS “REAL” FAJITAS? In this video we’re gonna show you how to trim, season and grill up BOTH of these delicious cuts to perfection.
Some say that ONLY the inside and outside skirt steaks are REAL FAJITAS and others say that ANY piece of beef butchered into STRIPS is a FAJITA. These are all fightin’ words and we’re bringing in these two more cuts of beef to the argument.
The fact is that a lot of people consider both of these cuts to be TRUE fajitas because they’re cut into strips, they’re soft and tasty pieces of meat, and they’re served in restaurants, food trucks, taco stands and in backyards across the world as FAJITAS. Plus! Both of these cuts are MORE TENDER than the traditional inside skirt steak fajita. Let’s get into it and fire it up!
Those Texas flour tortillas he shows reminds me of my grandmother from Corpus.

Thank you George, your gonna love it, thanks
My knowledge of the "true fajita' is that back in the day it was meat scraps that would normally go to the dogs...it was dirt cheap and the poor would buy it and learned to make a feast fit for a king. Thanks for this lovely video, I really enjoyed it. God Bless!
Been subbed since 3k followers Arnie. This channel is going to keep growing. Thank you for representing South Texas. Can’t wait to fire up the pit this weekend!

Hey bro show the recipe for your tortillas. Those are a game changer.
I stumbled across your channel last night and started watching. Subscribed this morning. Watching your videos showing your backyard, telling my wife that you have to be in south Texas. Then you mentioned the valley. Ive been to McAllen several times remodeling a home for a buddies madre. It kept intriguing me how close your backyards match so had to look you up. Your are town and her home are only a few miles apart. Everytime I have left there I've been sent home with stacks of homemade tortillas and or tamales. Cant make it down this winter from northwest Indiana. Thanks for the videos. If you have a good tortilla recipe i would love it. Keep up the great work. Thanks again
Waiting for this one!!! Come On Somebody!!!!
Thank you Luis
looks yummy!
You make it look so easy 😂 looks so delicious!!! 😋 👍
Thank you
we freaking love ya arnie!
Yeah buddy. Mouth watering for sure. I'll be making some this weekend. Maybe even some mollejas. Just saw that video. Yum!!
A lot of people are surprised when I recommend these two cuts. I have worked in restaurants for 35 years and I still use a thermometer just to double check myself.
I just ordered some wow seasoning .Can't wait to try it on my ribeyes
Thank you
Just subscribed! Thank you for this video. What spices are in the Wow rub?
great videos
Looks amazing. I miss good fajitas. Cant find them like that in south florida.
Delicious! 🤤
Damn. Making that tomorrow night for sure!
I’m hungry now!🌮
lol, getcha some wings Alvaro
Whoa with the Wow! a lot for those thin cuts!!
“Beef up the argument” lol I see what you did there 👍🏽 😆
hahahah, thanks
That sure looks good
The flippity-flip method 🤣🤣🤣 👑
I like to cook the trimmed area and collect the grease from the trimmings to brush on the main meat as it cooks.
Thats a wicked stash!
hahahaha tnx
You sure know how to make a guy hungry 😋
hahaha, yes we do lol.
Sirloin fajitas are the best!!!!
As long as they are not over cooked they are great.
@@ArnieTex yes sir!!! Wish we had markets like the rgv.
Arnie, the fajita meat they sell here in Shreveport as skirt steak is as tough as an old leather shoe. Hanger steak is quite expensive, if u can find it. For me it's a Sirloin steak they sell at Wally, marinated, grilled, an sliced thinly it's sumptuous.
What that recipe for the salsa!? It looks amazing with the tacos you made. Thanks buddy
@Marcos A, its at the at the 17:20 mark in this video
That's is perfect for my cumpleaños in 2 weeks
Carne Asada con una salsa uff 😛
Yessir sala de molcajete is the best.
EVERY TIME I WATCH ARNIE COOK HIS FAJITAS, I GET A STRONG CRAVING TO COOK SOME FAJITAS THE FOLLOWING DAY. I GO TO BED HUNGARY JUST THINKING ABOUT EATING SOME JUICEY FAJTAS LIKE THE ONES HE COOKS. JUST GOT
TO HAVE SOME TOMORROW IN SOUTHERN CALIFORNIA. I MAY JUST MOVE TO TEXAS BECAUSE OF HIS JUICEY FAJITAS. 😊
haha Thank you, vente
@@ArnieTex
" MAYBE " IN THE NEAR FUTURE. ☺
What cut of meat would I use for carne asada tacos? Would like it to be cooked well done.
You can use any meat you like but skirt steaks, flank steak and flap meat are the most commonly used. good luck
Just discovered your channel. I immediately subscribed and liked. Question…what knife are you using
Thank you for subscribing!!! these were Dexter knives, for the trim it was a fillet knife and for the slice it was a 10-inch slicer. you can find these on Amazon.
@@ArnieTex thanks for replying and keep the videos coming. BTW that mustache is bad a** bro.
I like that you didn't marinade I like the full beef flavor.
Saludos from the Bay Area San Jose is your wow rub available anywhere near del rio tx? The thermometer even cooking all my life makes everything better no guess work.
Hell A S the closest at this time to Del Rio is Eagle Pass at Rogelio's Meat market, you can also order online. I ship to California every day. Thank you www.pitmaster.us/
You have a new subscriber.
Thank you!!!
You know you’re from Texas when you eat tacos with flour tortillas lol. Great videos 👍🏽
Thank you, ya sabes where I'm from haha
Flour tortillas son para fajitas n seafood taquitos, whereas the majority of tacos and taquitos are tortillas de maíz.
TexMex however = Flour tortillas for fucking everything lmao
Houston #EastEnd🤘🏽 #ElBarrio
@@random_observer777 exactly. It’s a Texas thing
@@mikieb77 Texas are weirdoos
What brand filet knife is that? Need to get those meats nice and thin haha.
Delicious looking tacos! Plain and simple always works! When will your rubs be in Heb?
Not yet my brother but hope to have it in there next couple of months
Do you have a video of carnita tacos?
poor terry, drooling while u sample..lol
Which one do you like best ArnieTex?
Love you brother tex mex rules
Those are indeed fighting words
Mama Gutierrez always called her fajitas 'Arracheras Poblanos'
Can i order WOW seasoning, im in Cali and i want to try it🔥🔥💯
Hello El Vale, California is my second most busy state next to Texas, ship that way ever day almost lol. here is the link -->>> pitmaster.us/
People say they like there meat medium rare.
I like it medium rare with filet mignon as the meat has a little beefiness and I like some pink juice.
For ribeye and NY strip Iike them medium coz dislike fat that is not cooked.
For very mineral and beefy meat, I like them medium well because they keep that delicious beefiness without any pink juice and find them to strong when medium rare.
So great if you like your meat rare or well done, colors and taste are personal and cannot be debated.
It is hard to find hanger steak around here.
Yessir they are actually hard to come by most places, I got lucky at my local market,Aguilars in Edinburg.
Я все больше убеждаюсь в мнении, что мексиканская и кавказская кухня похожи. Лаваш и тортилья, шашлыки и фахита, сальса и аджика - это же по сути вариации одного и того же) Естественно с поправкой на доступность продуктов.
Arnie what part of the valley you from so I can pick up my fajita taco and I haven’t seen that wow seasoning where can I get it
Eli, you can find my rubs at Propit, and Aguilars ion Edinburg, Vera's in Donna,That Little bbq supply store in Brownsville and Bob Starks in McAllen and also Teds Borderland Ace Hardware in Weslaco. Thank you
I'd love to see what you do with a feral hog. I'm gonna go hog hunting in a few months and I have ideas but I'd love to see what direction you'd go with it.
Sometimes I fall asleep listening to Arnie talk about delicious Tex-Mex grilling…
Can the arrachera be butterflied too or cook it thick ???
@Erick I really prefer them butterflied, they cook quicker that way and same great flavor and tenderness.
Shout Out @Arnie Tex #Awesome Cook #Texas Style Fajitas #The Best :) Coming at you from South Texas Come on
Thank you Robert, see ya on the smoke trail buddy
Is the seasoning sold anywhere in McAllen area?
@Evolve you can buy it at ProPit in Edinburg, 676 south Jackson, Edinburg. Thank you
Great looking fajitas, this makes me hungry. Fajitas is one of my favorite dishes! Just curious, how you like these compared
to skirt steak fajitas?
Hey @CoolJay, I discuss that in the previous two videos, I prefer outside skirts myself and inside skirts are pretty tough unless you have some really nice and young prime or Wagyu. They are all good though when done right. Thanks for watching and do subscribe so you wont miss the next ones.
How can I get your cutting boards?
Awesome video .Good to know thanks. #flipittyflip🔥
Arnie, would it be a good idea to butterfly the hanger steak??
Personal choice but if it's real thick they do cook quicker so it works fine if you do.
@@ArnieTex thanks Arnie! Awesome content! Learning a lot from ur videos! Appreciate the reply!
❤️🍻
The bottom sirloin flap is known here as "Ranchera." Arrachera is not as available here and it's more expensive.
Mexican Power 🔪🐂
lol hahaha, bam!
Bad dude
You know how he has to explain use whatever seasoning you like because of the critiquing Chorizo Heads.
