Penne Pasta with Grilled Chicken and Hatch Chile Cream Sauce
Ingredients:
1 pack of penne pasta
1 pound boneless skinless chicken breast 1 teaspoon garlic powder
1 teaspoon thyme
1 teaspoon paprika salt & pepper to taste 2 tablespoons olive oil 1 tablespoon butter
3 cloves garlic, minced
1 can of hatch chiles (4 oz)
2 cups heavy cream (or 16 oz)
½ cup Parmesan cheese Parsley
Directions:
1. Prep Pasta: Boil salted water in a large pot and cook pasta al dente according to package instructions.
2. Season both sides of chicken breasts with salt garlic powder, thyme, paprika, and a generous pinch of salt and pepper.
3. Heat olive oil in a large heavy-duty grill over high heat and cook chicken breasts for one to two minutes per side until golden brown, then lower the heat to medium- high for 5 minutes per side or until cooked thoroughly.
Remove from heat and set aside.
4. Cook the butter, chopped hatch chiles and garlic for 1 minute or until fragrant.
5. Reduce the heat and add the heavy cream and parmesan cheese. Whisk until fully incorporated and
creamy. Add a pinch of salt and pepper to taste.
6. Drain pasta and cut chicken into slices and return to the same pan. Stir to combine and serve!
7. Sprinkle parmesan cheese and chopped parsley on top.
