This video, unfortunately, shines an unfair light on Canes. You can’t expect to get the best Canes you can get unless you go to one in Louisiana. Trust me, once you cross the Sabine, things change more than you would think.
Former canes employee here: the chicken is literally marinated in msg, salt and water over night. They have a seasoned flower and the batter is literally milk and eggs so it shouldn’t be too hard to make better. The sauce is the only thing we don’t know exactly what’s in it. We put mayo, ketchup and Worcestershire sauce in then add a pack of seasoning.

Mix 50/50 of mayo and ketchup 2. Add a tiny bit of garlic and onion powder then mix (not a lot!) 3. Add pepper to taste(you’ll need a lot, I usually cover the top of the sauce, mix to taste) 4. Add a few dops of Worcestershire sauce and mix, but keep adding a few drops while mixing until it tastes right! (You can also use soy sauce)

I’ve been working at Canes for 6 months and gotta say, when I first started I was surprised at how simple the process of food was made. Everything is done within minutes with the exception of the chicken in it’s “marinade” over night in the fridge. But it’s so easy to outdo, yet it’s still so good to me and everyone else I know. 😂
because most fast food places let their employees cook food in batches like its a gas station and just leave it all there sitting out going stale and dry.
Basically. Mayo is texture/fat and ketchup is a miracle product as its sweet/savory/umami/salty/acidic. It basically checks all the boxes and you tweak to taste from there.
I cook a lot so I can see where he’s coming from,about how it feels rushed and bad ingredients,but still I feel like fast food does it job greatly, If you wanted good food you go for a good restaurant like the blue elephant in Bangkok Thailand or kitcho in Japan But not everyone can or have the money to go to places like that or even the time. Fast food serves food fast (most of the time) and I think it has a good taste for food cooked by unprofessional staff

As someone who use to work at Cane's in the kitchen, these were made pretty similarly to how canes is, save for a few differences. The coleslaw was almost completely different, but for the rest the only differences were the type of bread used (which is admittedly a pretty big difference, but I personally prefer a softer bread) for the toast, putting salt on the toast, the fries being fresh rather than frozen (and not crinkle cut), and the breading on the chicken having seasoning mixed into the flour rather than it being plain. The canes sauce is also pretty accurate. We're not sure what exact spices are mixed in, as that part comes premixed so as not to ruin the secret or whatever, but when mixing canes sauce you do mix mayo, ketchup, and either mustard or Worcestershire sauce (I can't remember which, the front counter people would usually mix the cane's sauce at my location).The chicken at Cane's would be also be left in brine for at least 24 hours, then dipped in a bath of egg and milk right before breading and frying, rather than that being somewhat mixed into the same step, so that's another difference. But yeah, overall not too far off from how things are actually made at cane's. Also if I had to guess why your chicken came out dry it would probably be because they dropped larger batches of chicken to accommodate for the rush, so there was less care put into the individual tenders. The fries were probably floppy because you had gotten takeout and the heat got trapped in the box, the condensation making the fries soggy. We would actually have to throw out the food if the chicken was left standing for 5 minutes and if the fries were left standing for 3. I can confirm that when we would put the fries and chicken into the trays and takeout boxes that they would be so fresh that our hands would be burning lol. We had this trick of slapping our hands together really hard so that they'd be numb for handling the hot, fresh out of the fryer food. To this day I feel like I have heat resistance in my hands because of how much scalding food I would handle, and I only worked there for a year. But yeah, I agree that Cane's isn't what it's hyped up to be, purely because I want to be able to enjoy my food without burning my mouth on it lol.
Takeout and fried foods don't go super well together unfortunately. If you keep them enclosed they get steamed and soggy. If you leave them open they don't stay hot for very long. I feel bad for restaurants who get blamed for Uber Eats taking 45m to deliver their food.
I saw a recipe that used Worcestershire sauce and vinegar for the special sauce, but I haven’t had access to canes in over a year because they don’t have them near me so I can’t really tell the difference
Ya everyone who goes to canes knows you can just have it in the to go box for 30+ minutes like he did. Everything just gets soggy because it's a hot styrofoam box. Also sub that coleslaw out for another piece of toast. Fresh Canes is great.

While Josh’s meal looked very good and was probably better than canes, it didn’t look too similar. Canes does crinkle cut fries and their chicken is fried in some sort of breadcrumb that Josh does not do. And While canes food is good their restaurants always have a theme to them which makes them so special. I’ve been to one that was 80s themed. I wish you luck in recreating it, cheers.

The best way I can describe chain restaurants foods is like frozen microwave meals, the food is usually dry not much juiceness and taste more processed then fresh
Man, I've had some of the fanciest and most popular fried chicken tenders from top notch places and I still think Raising Canes is at the top of my list. That sauce is spectacular and the toast you should ask to have buttered on both sides.
He can! No disrespect but I was super looking forward to trying your food on my Texas trip last year. The chicken was cold and tough and lacked flavor. I cannot recall what the slaw tasted like, and forgot I even ate it until Josh showed it. Maybe if it was hot it would have been better? Not sure but I was sad to tell my friends in California that Cane’s just isn’t worth the hype.

I certainly don't doubt yours is better. But I gotta say I've never had dry or underseasoned chicken from Canes. Whenever I want chicken tenders Canes is where I always go because its always juicy and well seasoned.
As a former employee I definitely understand the 2 different experiences. And it happens when the chicken hasn't been marinated properly as well as the sauce not mixed well or the coleslaw having too much dressing.

As a Texan with a palate, Canes bread is pretty crap, to be honest. I mean if you get it double toasted (both sides) its aight, i guess. But id really rather have breadsticks from ANY pizza place. Which includes little ceasars. Canes isnt even from here. In n outs aight. Whataburger always leaves this weird taste in my mouth. Idk what it is. All those places are hella overhyped. I mean theyre ok. I wouldnt NOT EAT them (like taco bell)...but "to be known for?" Oh hail nah. Bbq. A lot of commenters here seem to be missing the point. The name of this series of videos is "But Better". If you're looking for good food made cheap, he has another series for that as well (But Cheaper). Also, some people don't seem to realize that once you start learning to cook and get pretty good at making your favorite restaurant menu items, you might feel that it's no longer worth buying from the restaurant itself. These days the only (good quality) restaurants I actually buy from are just the small local ones that need the business to survive. Edit: if anyone recalls from the "Doritos, but better" video, it was determined that his homemade Doritos were only marginally better, and not at all worth the effort to make. Fried chicken and fries are infinitely easier by comparison, and absolutely worth making yourself.
its fast food, just making it at home already makes it better if you have the recipe, he doesnt really have to downplay the food he purchased that hard, thats why people are making fun of joshua only liking the things he makes. I work at canes. I highly recommend sitting inside the restaurant and eating it there when they serve it on platters. I would say it is a very different experience. The box we serve it in steams all the food from its own freshness making it it’s own worst enemy. When it is on a platter the steam is allowed to escape giving you crispier fries and chicken, and keeps the toast from going mushy. Regarding the coleslaw: I don’t know why we serve it. I think it’s nasty. Luckily we have an option to sub it out for more toast, fries, or sauce. (I prefer toast) Please do this when the pandemic is over. Stay safe.

It's pronounced Wuss-ter-sure actually. Worcester is a city in Massachusetts. It looks like it should be pronounced war-chester but my sister used to live there and I can tell you with certainty it's pronounced Wuss-ter. Then the shire looks like it should rhyme with sire but it's pronounced the same way as New Hampshire. So worcestershire sauce is correctly pronounced as Wuss-ter-sure. The trick is to remember "Do you want to go to Worcester ('wuss-ter')? Sure!"
He also talks about how trash they are even though the meals are made in 5 minutes and still taste decent. Because I'm pretty sure most people can cook better than fast food restaurants if given a lot of time. Also he won the award for being the best at cooking better than people who don't even have time to cook a meal without it being microwaved or heated up.

Hey Josh, I'm a line cook and I just thought of something you should include in your videos, because it would really help them know how we work. When people are making these dinners, it would be helpful to say how long into cooking one thing you should start another so that it comes out all at the same time. You're a rock star. Love from DC.
If it sucks so much, they wouldn't have that many customers, look at DQ. He also certainly doesn't mind monetizing their creation for his own financial gain. If you're gonna copycat a place, try not to insult them. Cane's, unlike many large corporations, supports the local community in times of need and devastation, they're not too stingy with their patrons. The only real negative thing I can say about them is that their fries suck.
My husband has liked Raising Cane's for 4+ years. 🙄 It's not due to some fad. He just loves fried chicken. I just didn't know why Cane's vs Churches or some other chicken places. I just asked and apparently he just prefers their sauce.

i just made this for my family ! followed the chicken exactly (tripled the portions because i have a huge family!) except i used chicken tenderloins & olive oil instead since that’s all we had - they all LOVED it . i prepared it in the morning - marinated the chicken for another 5 hours. i thought it was come out okay, my dad even said it was better than canes !

While Josh’s meal looked very good and was probably better than canes, it didn’t look too similar. Canes does crinkle cut fries and their chicken is fried in some sort of breadcrumb that Josh does not do. And While canes food is good their restaurants always have a theme to them which makes them so special. I’ve been to one that was 80s themed. I wish you luck in recreating it, cheers.

He can! No disrespect but I was super looking forward to trying your food on my Texas trip last year. The chicken was cold and tough and lacked flavor. I cannot recall what the slaw tasted like, and forgot I even ate it until Josh showed it. Maybe if it was hot it would have been better? Not sure but I was sad to tell my friends in California that Cane’s just isn’t worth the hype.

A lot of commenters here seem to be missing the point. The name of this series of videos is "But Better". If you're looking for good food made cheap, he has another series for that as well (But Cheaper).
Also, some people don't seem to realize that once you start learning to cook and get pretty good at making your favorite restaurant menu items, you might feel that it's no longer worth buying from the restaurant itself. These days the only (good quality) restaurants I actually buy from are just the small local ones that need the business to survive.
Edit: if anyone recalls from the "Doritos, but better" video, it was determined that his homemade Doritos were only marginally better, and not at all worth the effort to make. Fried chicken and fries are infinitely easier by comparison, and absolutely worth making yourself.

I work at canes. I highly recommend sitting inside the restaurant and eating it there when they serve it on platters. I would say it is a very different experience. The box we serve it in steams all the food from its own freshness making it it’s own worst enemy. When it is on a platter the steam is allowed to escape giving you crispier fries and chicken, and keeps the toast from going mushy.
Regarding the coleslaw: I don’t know why we serve it. I think it’s nasty. Luckily we have an option to sub it out for more toast, fries, or sauce. (I prefer toast)
Please do this when the pandemic is over.

If it sucks so much, they wouldn't have that many customers, look at DQ. He also certainly doesn't mind monetizing their creation for his own financial gain. If you're gonna copycat a place, try not to insult them. Cane's, unlike many large corporations, supports the local community in times of need and devastation, they're not too stingy with their patrons. The only real negative thing I can say about them is that their fries suck.

i just made this for my family ! followed the chicken exactly (tripled the portions because i have a huge family!) except i used chicken tenderloins & olive oil instead since that’s all we had - they all LOVED it . i prepared it in the morning - marinated the chicken for another 5 hours. i thought it was come out okay, my dad even said it was better than canes !
