      Thank you for this video! For people that don’t roast chickens themselves can you do this with rotisserie chicken from the grocery store? And if so do you include the seasoned chicken skin? Thanks so much!

      Being a full time parent is definitely a full time job that requires skill, experience, innovation, patience, and love of course! Ideally, in a monetary society, it would make sense that the state financially sponsors or provides a periodic stipend to all "domestic engineers" for their role in raising the next generation.     My son went fishing this morning and stopped by to give us a couple huge fish. He was in the process of filleting the fish and began putting the head, tail, etc. in a garbage bag. I said "Oh no, what would Mary do?" I grabbed my biggest slow cooker and placed the heads, tails, skin in the cooker. I got the onions, celery, carrots, and threw them in. My son said, "Ewe, Mom, what are you doing? You can't eat that." I told him, "No, but we can drink it like Mary would do." My husband and I love you.

      lol such a sweet comment. I sent my husband a text (while he was at our local supermarket) with a picture of chicken feet and I told him to ask them for it... a while later he replies, "they dont carry this "disgustingness' " lol! I was laughing for a long time, I can just imagine the face he asked this with... and what the super young guys in the meat department said after he turned around lol

    I'm in the uk and I don't have a slow cooker. I cook my bone broth in a large pot on the gas stove, but even on the lowest setting, it's still too hot and my bone broth is quite thin. However, today I had an idea I'd like to share. I have turned off the gas and placed a tealight in its glass holder under the cooking pot, just to the side of the gas burner. It's working a treat and is much cheaper than using the gas. X

    Should have listened all the way thru because roasted 10# of leg quarters and began a pot of bone broth without listening to you, then I loaded the video and I used too much water and not enough goodies for flavor. However, I am going to proceed and maybe have the best chicken broth, ever! I am diabetic, and I will keep making this each month until I get it right! As always, thank you, Mary!     So here's a twist hope it gives a chuckle. I stopped eating meat at 14-15, now 67 i have two kitties 19 & 17 with health issues. So a carcus or other bones had to purchase. So, just finished putting it all together with Mary and hope it is successful for improving the health of - yes, my kitties. All done kitty compatible of course. Love Mary, meow.

    One book I clearly remember reading as a child and found it in my mothers sewing room was "Stone Soup" . This was a seed she planted and now it is coming to fruition! Thank you for the feeling of a Mothers love you give by sharing your knowledge!

    Looks so good! One of my favorite chefs always covered raw bones with water, brought to a simmer until the scum had risen to the top, then thoroughly rinsed the bones before returning to the pot and adding aromatics and seasonings. This really worked in producing a clear broth and reducing the scum that came to the top.

    You are absolutely the cutest thing 🥰. That was my first thought.
    My second was, "Wow! My soup tastes AMAZING after making this broth!"
    And that's saying something. Because 6 years ago, in my online profile where I met my husband, it very plainly said -- I bake; I don't cook. If you don't cook, we might starve. 🤣 He married me anyway and might do it again when he tries this soup from your broth recipe.

    I've used dry vermouth instead of white wine in risottos for years, but never thought of it for broth. Followed your recipe today and it was hands-down my best extraction ever!
    (I'm in California. A bottle of Gallo is not expensive.)

    I use lemon juice instead of vinegar, I usually have great results, and it lets me use that random lemon and the flavor is complementary

      It’s very healing to the gut and has zero carbs. I’m doing intermittent fasting and planning on doing a bone broth fast. When I’m hungry, I drink bone broth only for 3 days. 😊

    Hi sweet Lady! Our store had chicken legs and thighs for .49 a pound. So I'm making and canning broth/stock. I've roasted the chicken pieces, de boned them,( chicken pot pie for supper tonight.) Some simmer for 36 hours , some simmer for 4 hours. Why such a difference in times? Is it stock verses broth? I'm not necessarily making bone broth because I heard you say that it doesn't hold up to the heat. Love your videos, and have learned so much.!

    Absolutely hands down the best how-to vids on youtube....learning more than I thought I knew...lol! The W meats you recommend are no doubt quality but only the rich (1%) will be able to purchase 1 whole 4lb chicken for $35. I still can't believe it.

      Hi Samantha, Oh my goodness!! That is very expensive for a chicken. We can buy whole chickens here in the US for as low as 99 cents per pound. So it is possible to buy a basic chicken for about $5. You can enjoy the roast chicken and then use the Caracas’s to Make Bone Broth, Love, Mary❤️🤗❤️

    I'm going to start saving my chicken feet for broth. I love your frugallness...lol..those are cool freezer containers. I freeze goat milk in mason jars and sometimes I get one that breaks.

    Hi Mary, thanks for the tips and explanation on how to make a gelatinous broth, I've had my share of hits/misses, but one keeps on trying; I see that my local HEB is starting to see the chicken feet! Will be buying those for a successful broth. Also, wanted to share w/you that when I've made my chicken broth I add the 1/4 cup acv and about 1/2 cup of Chardonnay--talk about a rich and flavorful broth. As always, one can play around w/the amounts for one's personal taste.
    I've never had a problem w/garlic, I only add two nice (crushed) garlic cloves and that's all she wrote. I look forward to your videos.

    Hi Mary! Writing this in Feb 2022. Coming out of the pandemic. I am reading all your broth recipes. I noticed that you use white vermouth in your chx bone broth. Have you ever tried white port? I discovered chx& white port combination from a French cooking class years ago. Yummm! I get the inexpensive brand usually found in the wine dept of the grocery store. Give it a try!

    Thank you so much for making this video. I made this today, following your instructions (except I didn't have the cloth for straining). I added extra salt when it was done and it was delicious. My way of eating is Keto, so this is going to be a money saver for me. My dogs got the leftover carrots and bits of chicken. 😁

    Thank you for your demonstration for chicken bone broth. I do agree that using garlic when cooking chicken does change the taste of the chicken. I really do not know why it does that but I learned early on to not add garlic when you are cooking chicken. According to taste you can add it on when it is ready to eat.

    I do not have the capacity to store so much bone broth but I do make 1 carcass at a time. I had wondered why it was inconsistent. Turns out I was boiling it too hard. Thank you for helping me improve my bone broth.

    Thank you! I’m making broth with our thanksgiving Turkey carcass… do you add the skin? Also when you add the onion skins sometimes they have mold! I’m assuming you have to be careful not to add moldy onion skins. sorry for the weird questions, I haven’t been cooking that long 😂 😬

    Hi Mary. Would it be a good idea to make a 'shorts' video of some of your recipes, like this one? With just the 'reminders'. Like: bring to boil, lower to 180F (82C), skim of froth, simmer for 6 hours? To get all of the most important info in like 1 minute.

    Hi Mary. You mentioned boiling with destroy the gelatinous quality of the broth. Pressure canning is my preferred method of storage as freezer space is limited. Any idea if this would impact the nutritional value of my broth. Thanks and take care.

    We just processed meat chickens. I cut up a few and bagged. I kept the back and necks along with feet. How would you roast those parts so they can be used for chicken bone broth? Just salt, pepper and garlic before roasting? Yes we saved the feet and I packaged in groups of 4. Thank you for all your ideas 😊

      Great question. I would just use a little salt and pepper and then roast them at about 350°F until they become nice and golden but I wouldn’t use any garlic only because I find it takes on an off flavor when it’s simmered for so long and bone broth. Love, Mary

    Excellent video - thanks! But I have a question: If you only put in enough water to cover, and then you cook it for 6 hours, doesn't a lot of that water evaporate? Do you keep adding water to replace what evaporates?

      Great question! Do not worry. You will be simmering this on the lowest setting and yes, there will be some evaporation but not a lot - but you want there to be some evaporation as it helps to concentrate the bone broth. Do not add any extra water. Love, Mary

    Mary...this past Thanksgiving we made a bone broth chicken stock and removed the fat. THEN we debone the Turkey and did the same in the pressure cooker...Girl...you talk about a rich Turkey and Sausage gumbo??? Good Lord😄we just combined all the drippings and everything and defatted it

    Hi Mary! You are a delightful and comforting teacher to watch. Just discovered your channel and have the chicken bone broth on the stove right now. Thank you for your in depth coverage. I’ve been spooked to make this because I have read if not done properly it can make one ill. Quickly cooling and refrigerating is key I read. Also, your technical advice of using a thermometer is valuable to safety and gel production . Additionally, I found smoked organic chicken ($7.99) and organic chicken feet (6 for $2.27 here in CA) at Whole Foods. Thank you for sharing your knowledge. I will next use a Cosori pressure cooker to compare results with the identical ingredients and see what my family prefers. Based on your actions, I have contacted Cosori for cooking recommendations. I appreciate your robust discussion. Take care!

    Bone broth is very healing to the gut and my gut really needs help. I’m planning on doing a bone broth fast for 3 days. When I’m hungry, I drink only bone broth or water. It’s either bone broth or sardines. I will drink chicken bone broth. 😊

    Hi Mary, I love doing this at Thanksgiving with the turkey carcass, and it makes the tastiest stew. I haven't used the chicken feet before so I'll have to give it a try! Also, you sound just like my Grandma did, and that makes me very happy :) She was from the East Coast too. She lived in Brooklyn with my Dad when he was growing up, but not sure where she lived before that.

    Howdy Mary!
    Now that you're a Texan (as I am, born and raised), I'm sure you've heard of menudo. I would like to know your thoughts on beef tripe, beef feet, and pigs feet as they make a highly gelatinous broth when I make my menudo. Are they good for bone broth? If so, would they stand alone or be good addition to your other recipes for bone broth? I'm so glad I found your channel. I enjoy all the topics you cover as well as the way you break things down.       Spider Monkey - Oh my goodness! All great questions!! I have a video on making bone broth with beef feet - and yes, it is so gelatinous!! You can watch it here: ua-cam.com/video/P-VIFx_jzmI/v-deo.html And this Saturday, I’ll be releasing a video where I show how to make bone broth with ham shanks. Now - you raise an excellent question about menudo. I have not tried it. But as to tripe - I will share that when I was growing up, I used to make that with my uncle who was Lebanese. I haven’t thought of that in years!! I am going to have to look into all of this as you know I am a real nose to tail cooking sort of gal!

As the saying goes, I may not have been born here but I got here as fast as I could!! So glad that I met my sweet Texas husband at the airport while traveling!! I have lived here over 20 years now.       @@MarysNest Wow! Thank you for the speedy response and the link. After an eight hour "binge session" watching your videos yesterday (they are addictive!), I never thought to do a word search on beef feet.. still a little green on this whole UA-cam thing, and kept clicking the suggested videos. I did learn a lot though, and am looking forward to trying out some of your ferments as well as a lot of the other goodies you show.
      I know tripe is a under utilized part of the cow here in the US (US Wellness Meats didn't even seem to have it on there website), but I've loved it since I was a boy. Can't help but wounder about the dish your uncle used it in, but am honored that I could tickle up a good memory. I've gotten to where, I don't really make red menudo much anymore TBH. Just boil the tripe up in salted water, adding garlic and onions for the last hour. Never concerned myself with the temp before, but will be keeping it at 180 from here on out for more of that gelatinousy goodness.
      Looking forward to mining your past videos for more tidbits, as well as seeing what'all you have in store for us in future ones.

      Spider Monkey - Thank you so much!! What a great comment. It was a joy to read!! My uncle made Ghaame (I think that’s how it’s spelled.). It’s stuffed tripe. He was married to my father’s sister and they lived down the street from us. He loved to cook!! And I loved spending time in the kitchen with him. Making the tripe and other delicacies like stuffed grape leaves. It was all so exotic to this Irish-Italian kid!! LOL!! And oh so delicious. But you will laugh when I tell you this...I did not know what tripe actually was until I was older. It was a bit of a shock!! LOL!! 😱😱😱Love, Mary🤗🤗🤗

    Watch your video on a cold & windy March day. Sounds so yummy! I learned a lot from you today. I had always made a soup from my roasted chicken carcass, but had no idea how low the heat should be for simmering bone broth. Also like the idea of chicken feet to increase the gelatin. Thanks so much for the great tips!

    Ohhh my goodness @1:55 and the chicken feet. HAHAHAHA! I have my first flock of chickie babies for eggs and all I saw was their cute little weird feet on a plate. LOLOLOL!!!! I'm laughing so much right now but I also tend to comment way early in videos because I'll forget. Definitely no mad or hate for using chicken feet. It just made me giggle a bit. Now....     Mary I have a question, I am terrible dry and frizzy hair and have been told to make bone broth. I live in India and have never heard of this bone broth. I do not possess a slow cooker and electricity is very high in India, besides I only have a pressure cooker and definitely not want to make use of unending use of hours. Please tell me how this bone broth will help,will it help constipation and dry and frizzy hair. Please bear with me for asking such questions but I feel so comfortable asking you because you are the only one who keeps to your word that you like to help and you surely help. Tku and please let me know, will be ever so grateful. On account of constipation I suffer from so much gas, hence I need help, thank you.
