►Ingredients for Halal Chef's Original Chicken Tikka Masala
►For the Chicken Tikka Paste
13 garlic cloves
2 inch long ginger
5 - 7 birds eye chili (How hot you want it?)
1.5 tbsp coriander seeds toasted
2 tsp cumin seeds toasted
1.5 tsp garam masala
1 tbsp tandoori masala
1/2 tsp turmeric
1 tsp salt
7 tbsp sunflower or mustard oil
►For the Chicken Brining
1 kg chicken thighs
1 tsp salt
3 tbsp lemon juice
1 tsp black pepper
►For the Chicken Tikka Marinade
1 cup yogurt
4 - 5 tbsp chicken tikka paste
►For the Chicken Tikka Masala Sauce
7 tbsp sunflower or mustard oil
Few whole spices
2 medium onions
3 garlic
1/2 inch ginger
1 green chili
400g canned tomatoes blended with coriander and fenugreek leaves
1/2 cup water
1 tsp kashmiri chili powder
1/2 tsp turmeric
1 tsp cumin powder
2 tsp coriander powder
1 tsp garam masala
Add some salt if required
70g butter
150ml cream
►For the Garnish
Ginger
Coriander or Fenugreek leaves
►For the Naan Bread
300g plain flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp salt
2 tsp sugar
2 tsp cumin seeds
1/2 cup yogurt
2 tbsp oil
Lukewarm water as required
Brush with ghee
