I like them even better than sweet potatoes! Thanks for taking away my fear of the acorn squash. And my fiancé who is super picky liked them too!
I put the whole squash in a baking dish with added water for moisture, then bake it till its soft and easy to cut. Then I cool and clean out the seeds and add butter and brown sugar in the center of each half and continue to bake till done. This way is so much easier to cut the squash!

Acorns are my favorite winter squash. We have a Sugarbush and have been cooking squash this way for 40 years. If you don't have real maple syrup you are severely deprived!

the best way to cook acorn squash is whole and cooked until the outer skin is black or burnt looking. the skin will hold the moisture in until that point. the area right next to the skin will be caramelized and delicious. just cut it on half and scoop it out. why make it hard? more people would eat this if it wasn't harder than it needs to be. I learned this from being lazy I guess, though in this case it is way better.

You can bake acorn and butternut squash in the oven. Bake the butternut squash first as it takes longer. This can be done days in advance actually. Chop into small cubes and mash. Mix equal parts of butternut and acorn squash together and use to make pumpkin pie instead of using pumpkin. Follow the rest of the recipe for the pie with no changes. The pie will have a mellower flavor. I have used just butternut squash but I have not tried just acorn. I might experiment. You can leave the pie crust out and just have a custard. Fun suggestion, invite your friend over!

Make sure u buy a good quality knife and keep it sharp. Maintenance of a knife is important in a kitchen...especially if your the one doing all the cooking! Trust me! Im a chef and have gone through several knives to find a good one. All of them are nice and sharp at first but with repeated use daily on numerous items the blade dulls and needs a good honing and sharpening almost weekly. Regular home cooking though wont wear out your knives bad but still a good quality knife can run between $50 -$300 or more for one 8” chef knife. But in my opinion a chef knife is pretty much all u need if you have good knife skills.
I have learned to remove any stickers on the squash before storage and before purchasing. On several occasions a perfectly fine looking squash would have mold and rot underneath the sticker.
