I just made a double batch of English Muffins. These are excellent, and very light and fluffy! I had to split one, ( with a fork) toast it, and slather it with butter. Delicious! Another winner! ❤️🙏🏻😊
I’m watching this in 2023. I made crumpets with your crumpet recipe, and I’m going to try these. I love this type of muffin to make an egg-cheese open sandwich for breakfast.

Always nice to see your easy recipes explained by you with full cooking instructions. I looked this up again this morning as English Muffins are hard to come by and are expensive as well. I wanted to make eggs Benedict, I had my home made Smoked Australian Salmon sliced, eggs ready to be made into Hollandaise Sauce, Ham sliced, and realised no Muffins, and no where close to me has them so I am making them right now. Please keep making your videos, I love your recipes they all work perfectly, even here in Thailand where it is hot all year round today 33c at 10am.

Christmas was indeed a quiet and peaceful time for us, I trust yours was the same. Diabetes has a lot to answer for, but lifestyle change is preferable to taking a cocktail of drugs for me. It is hard looking at all those Christmas goodies without being able to eat them though. I think we'll all be happy to see the back of 2020 Mr Paul!

I remember going back a few years (maybe the 80s and 90s) that you used to get brown muffins which I assume now were wholemeal. I was only a kid and I loved them. I'm wondering now if they were a figment of my imagination though as no one remembers them. I much preferred them to white. Have you ever made wholemeal muffins Mr Paul? How would you suggest making them wholemeal? Thank you.
We always made both brown and white English muffins. For the brown ones we always used 50/50 wholemeal flour and plain white flour, then proceed as for white muffins.

I made this at home today- used whole wheat flour, oil ..they were really good, soft and pillowy..only they were a little bit doughy in taste..to remove that taste, I baked them in the oven for 7 minutes at 180*C..its a perfect breakfast..slathered with butter and ate it 👍...will you please guide me on how should I remove the doughy taste from the muffins ? Hello Shweta, it sounds like they were undercooked, however, over the years I've tried making them with whole wheat flour and they were less than perfect. Whole wheat flour is heavier than white flour and even creates some problems in baking ordinary bread. Usually, we have to adjust the yeast when using whole wheat or whole grain flour. Hello, Mr. Paul! I made your English Muffin recipe last night and they were quick & easy. This morning they had firmed up to a more dense muffin. Hello Irene, I've tried adding some whole-wheat flour but unfortunately they didn't rise well and even almost doubling the cooking time the flout still tasted raw.

Hi Mr. Paul, I made your Muffins yesterday morning as previously advised. The recipe is easy to follow and prepare, the only difference I made is used Maize Polenta instead of Semolina. The result was amazing great taste and texture. I noticed that the offcuts of the dough after being Kneaded back together kept their shape much better than the Dough that was just rolled without Kneading. I might give it a light Knead next time before rolling what do you think?
Yes that should be fine, the original proofing temperature can affect the final rise, if you find ab extra knead works that's OK. Do please post me some photos of your bakes n my facebook page, I and my followers añways look forward to seeing them.

Yes, absolutely you can, sometime in the bakery we had shortages of bread flour and uses the all purpose flour with great success. Let me know g¡how you get on please.

Hi Ann, at my advanced age (80) I neither have the time or the inclination to convert my recipes into the the most inaccurate measuring system there is. Right before you said you were adding the butter, you added some dry ingredient (it looked like a small amount), but didn't say what it was.. What exactly was that? The salt was in the milk and the sugar and yeast were already added to the flour. So I'm at a loss as to what you tossed into the bowl a second before you said you were adding the butter.

Yes, definitely, it's the proofing that makes it soft and fluffy not the kneading. The keading, by hand or machine only develops the gluten.
