Valuable video and thanks for the tips about reviving older fruit, keeping the cake light by avoiding breaking the fruit, and how fan ovens can dry out the surface leading to cracks as the cake rises.

I'm 71 and starting to bake cakes. One successful Victoria sponge and two edible sultana cakes but not risen as I expected. Used 200g plain flour plus 1.5 taps of baking powder, 125g each of margarine and caster sugar, 3 eggs 150g sultanas, 3 drops of vanilla extract. Fan oven at 150 degrees Celsius, 7.75" X 3.25" round light metal cake tin.
I shall be grateful if you will comment and put me right where you see fit. Regards Tommy.

This seems just the ticket, a very handy cake but I will put off making it until the Christmas cake has gone.Your baking tin seems to be nice and deep, ideal for my bread, a lot of them are quite shallow.Happy 2021 to you and I await your recipes throughout the year.

I made this cake today and it was excellent! I didn’t have any lemons so added a 1/4 teaspoon of a good lemon extract in with the eggs and it seems to have worked well to give a hint of citrus. Also, thank you for the tip on the sultanas! I soaked them as you did and it made them so much better. Thank you for the recipe Mr Paul!

Hello Mr. Paul, and Happy New Year from both of us. When I saw the picture,
before watching the video I had to ask Rosa, "What are Sultanas?" She explained
kind of like raisins but larger" She then said, "I can bake that for you." She knows
    I like raisins. YES PLEASE!!!
You can put them in your oatmeal, in put them in your cake, you can put them on
your salad, you can put them in your bread, you can put them in your cookies,,,,
but for gosh sakes Mark don't put them on your head because your tongue will
beat your brains out trying to get to them! Know what I mean. 😋😋😋😋😋
Very nice Mr. Paul. Now off to watch Eccles Cakes video.
