  • Made with beef, potatoes, carrots, mushrooms, and curry roux, this savory and hearty Japanese Beef Curry makes for a fabulous introduction to new curry eaters. Adapted to Japanese tastes, it’s mild and sweet with a stew-like consistency. Even children enjoy it thoroughly! You have to give this easy recipe a try.

    INGREDIENTS
    2 onions (large; 1¼ lb, 567 g for 8 servings)
    2 Tbsp neutral-flavored oil (vegetable, rice bran, canola, etc.) (divided for the onions and beef)
    2 Tbsp unsalted butter (divided for the onions and beef)
    1 russet potato (11 oz, 309 g for 8 servings)
    1 carrot (large; 8 oz, 230 g for 8 servings)
    6 cremini mushrooms (2.6 oz, 80 g for 8 servings)
    1 knob ginger (1 inch, 2.5 cm; ½ tsp grated for 8 servings)
    1 clove garlic (minced)
    1¼ lb (567 g) boneless chuck roast (I recommend chuck roast for its tenderness and higher quality; you can use stew beef as it's slightly more economical, but it's made up of bits and pieces leftover from carving the chuck roasts, so the meat is not as tender)
    ¼ tsp kosher salt (Diamond Crystal; use half for table salt)
    ¼ tsp freshly ground black pepper
    1 Tbsp all-purpose flour (plain flour)
    ½ cup (120 ml) red wine
    ½ Tbsp Japanese curry powder
    1 Tbsp tomato paste (or ketchup)
    4 cups (960 ml) beef stock/broth (1 QT for 8 servings; store-bought beef stock is often salted; for less sodium intake, use 2 cups/480 ml beef stock + 2 cups/480 ml water)
    ⅛ apple (I use Fuji apple; add more for sweetness; substitute 1 Tbsp honey or mango chutney for 8 servings)
    1 Tbsp Worcestershire sauce
    2 Tbsp milk
    1 bay leaf
    1 box Japanese curry roux (7-8.4 oz, 200-240 g for 8 servings; or use my Japanese Curry Roux recipe)
    For Serving
    cooked Japanese short-grain rice (1-1½ cups (180-270 g) per person)
    fukujinzuke (Japanese red pickled vegetables) (optional)
    rakkyo (Japanese pickled scallion) (optional)

    5:55 - Turn off heat when potatoes are tender
    6:07 - Add Japanese curry roux and simmer
    6:42 - Serve with white rice and enjoy

    It is divine. I made this for just myself, and now I have lunch for tomorrow! The extras like the apple, ginger, tomato paste, red wine and Worchester sauce make it taste really special. With a rough day like today for me, this dish can really turn it around into a better one.

      I used to use soy sauce and fish sauce, then I just started using worchestershire sauce.

    Yes!!! I work at a Sushi and Ramen place, and while we usually just have some ramen, or a rice bowl, every once in a while my boss will make us all Japanese Curry. It's so good!!! I always want to take some home, but we never have left overs. As far as I can tell this is pretty similar to his, maybe a bit less thick, and he doesn't use apples. But I want to try it!

    Great recipe as always! Is the use of worcestershire sauce, tomato paste and red wine traditional Japanese style? This recipe gives me Kenji Lopez-Alt vibes (not to be offensive in any manner). Anyway I love you are back to the longer versions, please keep up the good work!

      😂 It’s beef curry, so we do use it. Tomato paste can be ketchup too. Worcestershire sauce can be Tonkatsu sauce. Thank you for your kind words. We try to make long videos for recipes that require many steps. 🤗

    I had beef curry the other day at a Japanese restaurant I frequent. But I decided to try the beef curry. The sauce was okay but the beef was not cooked properly. It was tough and flavorless. I was so disappointed. I think they don’t keep good cooks, or something. Since then I wanted a good beef curry. I like what you have done. I think I will try your version.

    I loved the recipe, however mine was more runny than thick, should I leave it simmer longer than 10 min with the lid on after I added the curry roux? Thank you for your answer

      You can cook for longer without a lid. You can also add more curry roux if preferred.

    I use only one pan, hate doing dishes! Receipt taste very good. Have problem getting the red ginger where I live.

      I really wanted to caramelize the onion (that takes a long time)... so I speed up the process by using the two pot/pan. Otherwise, yes, you can use one pot. What's red ginger?

      @@juandenz2008 Thanks, I’ll give it a try. When I was stationed in Japan, I would order me a bowl of curry, gyoza, and a large Kirin beer. I went there so many timesI didn’t have to place my order! 😂. Another dish I miss was sabuta!

      @@maninifarmer1338 If you want to make Beni Shoga, some recipes call for plum vinegar, but there are other versions that give substitutes like Rice wine vinegar. You might need to experiment a bit to get the taste you want. I hope you can recreate your favorite dishes.

      You can certainly make your own curry roux using curry powder, and I think butter and flour.

      make a roux with: oil, onion, garlic, ginger, apple, curry powder, butter, flour, maybe add worcester and ketchup. onions and apple will make up most of the roux, probs a cup or more each. garlic and ginger maybe just a spoonful each.

    If it's possible, please add the ingredients name in Japanese too. It will be easier to find out the ingredients in supermarket or while shopping.

      I've been sharing more UA-cam #shorts as UA-cam has been promoting this type of videos more on this platform... We work so hard to make long videos but not too many people watch them these days. Maybe due to shorter attention span... Very sad!

    Trying to find Japanese curry roux. It's not available where I live. I have 1 more Asian market to visit, if I can't find it there, I'll search Amazon.
    Japanese curry is my favourite. My Son promised to take me there because it's been a place I've wanted to visit for 40 years. I could have gone when I was younger, but didn't want to bring my Son who was a toddler and who was born with migraines. Now that he's flown the coop I couldn't go because I became disabled with a rare disease and used up my savings. Now he's an adult and wants to treat me!

      Edit: I have all the ingredients, but my garam masala might need replacing. Thanks so much for pointing me in the right direction. I adore curries, but Japanese curry is my favourite.

    This is a delicious recipe, the only thing I advise against is to not caramelize onions with butter because it burns easily on the bottom with the cooking time and vessel

    Serious question. What's the point of adding olive oil and butter in a pan? Why not just one or the other?

      you "can" use only butter (or olive oil). I personally like the butter addition in the curry - rich, creamier it is really good. But I don't want to too much, so half and half.
