Use your imagination. Its not hard if you have one. I cold smoke my cauli, mash it with smoked butter and cream and add fried leek (Ive also added brussel sprouts instead of the leek) also cooked in my cold smoked butter. Just add some salt and pepper and bingo an absolutely outstanding mash

Yup! I used it in a lot of my testing, but i found that it it dried out the cauliflower TOO much, which in turn, led to more cream and butter - and it was almost too much fat for the flavor. It was also a pain to clean - something Im not a fan of. Pressing it against the sieve seemed to work best in terms of dryness as well as cleanup!
I make mine in my vitamix with heavy cream, butter, salt&pepper, cream cheese and chives. The cream cheese gives that mashed potato mouth feel. Appreciate the “Encounters of the third kind” reference. 👽
I love to add a little chicken bouillon powder to the garlic, butter and cream...helps mask the strong flavor of the cauliflower, and adds a little more flavor. Fabulous video, as always.
I steam up the cauliflower, drain, add butter, cream and half a wheel of the boursin herbed cheese stuff. Hit it with the immersion blender until smooth. Very good.

I made this recipe,... sorta. I instructed my shopper to get a head of cauliflower, but got back a bag of fresh riced cauliflower. I just stemed it in a little water. I dont have a potato ricer, so I just drained the cauliflower and put it into my multi blade food processor. I never measure for seasoning so I just throw in what I think it needs. I used garlic powder and onion powder. The shopper forgot fresh garlic and chives. Taste, correct and move on. I used cream cheese too, copious amounts of butter as well. . Also salt and pepper. It was a hit with the family. That food processor made all of the difference. I have the hand blender. I might use that next time. Thanks for a much improved recipe. I happen to notice a potato flavored extract on a website that I browsed. I think I might experiment with it. As good as this recipe is, I think just maybe this extract might be the perfect improvement, or the greatest disaster in cooking history. I'll let you know.

Not being deterred I insisted on having "mashed potatoes" with my meatloaf tonight, and got out the ricer. Made this for supper from a small cauliflower and she was VERY disappointed that the small cauliflower only yielded two servings. Her first comment was, "You are making this for Christmas dinner. I can't believe this is cauliflower." Hats off. GREAT RECIPE! (I did add two tablespoons of powdered butter and two tablespoons of powdered creamer...it was excellent.)

All I had was Costco riced frozen cauliflower so I: 1. opened up 1 bag (they’re individually wrapped) and poured it into the biggest sauté pan I had. 2. On med/hi heat for 15 minutes, I salted and cooked the cauliflower uncovered - occasionally mixing it around to let the steam escape. 3. After 15 minutes, I poured the cauliflower, 4 oz cream cheese, dried parsley, pepper, 2 minced garlic cloves, 1 tbs butter, dash of half and half into a mixing bowl. 4. Purée with an immersion blender til you’re happy with the texture. Enjoy! Makes 2 small (but satisfying) servings. It was delish and not runny at all! Shout out to everyone in the comments with the cream cheese idea. It’s not mashed potatoes, but I knew that from the start.

Made these. They aren't bad. Add some butter and they taste "close" to mashed potatoes. There's still a hint of cauliflower but I enjoyed them on my Keto diet.

Another potatoe recipe is using Heavenly Fan french fry blend but adding hot chicken stock mixed with s&p, onion powder, garlic powder instead of hot water. Add melted butter and dashes of cream until it looks like mashed potatoes. You can also make fried breakfast patties with this.
Thank you for being a low carb channel for diabetics. I tend to crank down some of the heavy cream and butter because I am mobility impaired, so weight. (kind of like ants, very annoying) But it's nice to have stuff that isn't 100% keto.

Cook the cauliflower in chicken broth. Add a tablespoon or so of cream cheese, maybe garlic and chive flavored cream cheese. And though it's not considered strict keto add a little ranch seasoning mix for even more flavor. Dang, now I have to run to the store. Thank you for sharing these yummy recipes, definitely going to try many of them.

Interesting. The second method I want to try. A quick and easy Mashed Potato recipe I use is to steam a pound of frozen cauliflower then mix with a can of drained and rinsed white beans such as Cannellini beans in a food processor. It is very close in taste and mouth feel. It is not Keto but has a much lower GI than mashed potato's.

Oh! BTW Mushed pumpkin is even better! We do it for us-keto-people and usual mushed potato for carbs-addicted-guests and those freaking guests always eat our mushed pumpkin and then we throw away the potato. I wonder if i could grate the pumpkin and microwave it, because now we cook it in the oven to evaporate water before mushing.
pumpkin is delicious, but have to be careful with it as the carbs can start adding up. My family will make mashed pumpkin and make an garlic-olive oil dressing for it!

Doing mostly carnivore because of health issues, but do have some veg now and then as I grow a few odd greens, and there is nothing like creamed spinach from your garden, your own lettuce, chillies, herbs and so on. I wish you success in your channel, that you would be blessed and prosper.
@@BlackTieKitchen It was great. I had to really press the riced cauliflower against the fine mesh strainer to get as much water out as possible, but it's worth the extra effort for that silky end product. Topped it with some asparagus and garlic butter steak bites.

I'm not gonna lie, I celebrated the defeat of cheeto man with a consumption of copious carbs, but it's time to fall back in line. It will work with frozen, but you might need to wring out more moisture. As far as using a hand mixer... Im not sure. We arent mixing - we want to eviscerate!
@@BlackTieKitchen yes! My attempts have sucked! I want a nice chicken broth or beef broth type gravy. A little xanthum gum doesn’t seem to be enough and making a roux with coconut flour was as tasty as wood pulp.

@@BlackTieKitchen the only one that worked was adding cream cheese. I added a dairy free because I keep kosher, but it still worked and made chicken soup into pot pie filling, which was great. Almond flour didn’t do anything, coconut flour-no but it does make a roux. Stand alone in gravy, that’s the wood pulp experiment. Gelatin? Maybe (I have beef gelatin in my cart online) xanthum gum looked watery and and tasted disappointing. disappointing. I want KFC or Popeyes gravy.
Made the creamy version, best ever. But, I’m not strong enough to get the cauliflower through the my ricer, better hit the gym. I wonder if I started with cauliflower rice, which all the stores now sell, cook then push through the ricer would be easier?
Here's an easier creamy version. Chop cauliflower relatively small (don't be fancy... just start chopping). Add to pot with plenty of room. Free-pour heavy cream (about 1/2 way up the cauli), add a good knob of butter, several peeled garlic cloves, some salt & pepper, and grated nutmeg. Cover and simmer until soft (you can't overcook this really but watch the cream). Keep pretty low heat to not let cream boil over. Once cauli is soft, pour off a bit of the cream and keep aside. Use immersion blender in the pot until silky smooth. If too thick, return some of that cream (any leftover cream, DRINK IT). Adjust seasoning and VOILA! Super easy

Cook the cauliflower in chicken broth. Add a tablespoon or so of cream cheese, maybe garlic and chive flavored cream cheese. And though it's not considered strict keto add a little ranch seasoning mix for even more flavor. Dang, now I have to run to the store. Thank you for sharing these yummy recipes, definitely going to try many of them.
Dont see why ranch seasoning wouldnt be considered keto - keto just means "extremely low carb" - that seasoning is pretty much 0 calories 😂

Interesting. The second method I want to try. A quick and easy Mashed Potato recipe I use is to steam a pound of frozen cauliflower then mix with a can of drained and rinsed white beans such as Cannellini beans in a food processor. It is very close in taste and mouth feel. It is not Keto but has a much lower GI than mashed potato's.

Oh! BTW Mushed pumpkin is even better! We do it for us-keto-people and usual mushed potato for carbs-addicted-guests and those freaking guests always eat our mushed pumpkin and then we throw away the potato. I wonder if i could grate the pumpkin and microwave it, because now we cook it in the oven to evaporate water before mushing.
pumpkin is delicious, but have to be careful with it as the carbs can start adding up. My family will make mashed pumpkin and make an garlic-olive oil dressing for it!

@@BlackTieKitchen It was great. I had to really press the riced cauliflower against the fine mesh strainer to get as much water out as possible, but it's worth the extra effort for that silky end product. Topped it with some asparagus and garlic butter steak bites.

Steaming it is actually better than boiling as it isn’t so wet.
It is, but i find it can be a bigger pain to not get burnt. Depends how you steam it though :/

It will work with frozen, but you might need to wring out more moisture. As far as using a hand mixer... Im not sure. We arent mixing - we want to eviscerate!

@@BlackTieKitchen yes! My attempts have sucked! I want a nice chicken broth or beef broth type gravy. A little xanthum gum doesn’t seem to be enough and making a roux with coconut flour was as tasty as wood pulp.
Someone commented somewhere that coconut flour is the equivalence of a mouthful of sand and disappointment. In most cases, I would have to agree 😂

@@BlackTieKitchen the only one that worked was adding cream cheese. I added a dairy free because I keep kosher, but it still worked and made chicken soup into pot pie filling, which was great. Almond flour didn’t do anything, coconut flour-no but it does make a roux. Stand alone in gravy, that’s the wood pulp experiment. Gelatin? Maybe (I have beef gelatin in my cart online) xanthum gum looked watery and and tasted disappointing. disappointing. I want KFC or Popeyes gravy.
Made the creamy version, best ever. But, I’m not strong enough to get the cauliflower through the my ricer, better hit the gym. I wonder if I started with cauliflower rice, which all the stores now sell, cook then push through the ricer would be easier?
Should be easier! The one thing with cauliflower rice (assuming it's frozen) is that you may want to squeeze out some water after you cook it!
Here's an easier creamy version. Chop cauliflower relatively small (don't be fancy... just start chopping). Add to pot with plenty of room. Free-pour heavy cream (about 1/2 way up the cauli), add a good knob of butter, several peeled garlic cloves, some salt & pepper, and grated nutmeg. Cover and simmer until soft (you can't overcook this really but watch the cream). Keep pretty low heat to not let cream boil over. Once cauli is soft, pour off a bit of the cream and keep aside. Use immersion blender in the pot until silky smooth. If too thick, return some of that cream (any leftover cream, DRINK IT). Adjust seasoning and VOILA! Super easy
