💓Hello! I'm going to cook awesome pork today! Let's cook together!
You can cook any part of the pork this way.
Today I bought a collar of 1.3 kg.
I make deep cuts with the narrow blade of a knife.
I transfer the meat to a deep bowl.
Now I prepare the marinade.
soy sauce 4 tbsp. l.
Coriander 1 tsp.
paprika 1 tsp.
Black ground pepper 1 tsp.
French mustard 1 tsp.
honey 1 tbsp. l.
Mix well.
I pour the marinade over the meat.
Mix well.
I cover the bowl with cling film.
I put the meat in the fridge for 12-24 hours.
I take the marinated meat out of the fridge.
I cut 1.5m of parchment for baking.

I dip the parchment in the water.
I squeeze the parchment, but not very hard.
I spread the meat out on parchment.
I wrap the meat very tightly.
Transfer the wrapped meat to a baking sheet.
I put it in the oven at 160°C for 1.5 hours.
Large potatoes 3 pcs.
I cut the potatoes into long slices.
I shift the potato slices into a glass or ceramic mold.
I cover them with cling film, poke holes and put them in the microwave for 5 minutes.
Onion 1 pc.
I cut into small cubes.
I dry the potatoes with paper towels.
vegetable oil 50 ml.
I put the potatoes in hot oil and fry them on all sides until golden brown.
butter 20 g
I add chopped onions.
I fry the onion until soft.
Cheese 3 pcs.
I add cheese to onions and potatoes.
Paprika 0.5 tsp.
A mixture of rosemary and coriander 0.5 tsp.
Salt to taste.
Cream 10% 50ml.
The potato is ready! It's time to see how the flesh turned out!
I cut the parchment. What a delicious scent!
What beautiful meat!
The meat is incredibly soft and juicy. You can eat it with your lips!
However, if you cool it and leave it in the fridge for 3-5 hours, it will slice thinly!

Looks wonderful! BTW, I marinade meat now by putting in a 1 gallon ziplock baggie in the dryer for 15min on the air dry (no heat) to tumble it.
The marinade penetrates better, and it helps break down the meat fibers. Just use a good ziplock....maybe double....wrap in a towel, and
put rubber bands on each end to keep it in the towel. I've never had one leak. And my wife gave me permission before I tried it. 😉👍

I like that the oven stays clean this way. The fat from pork does not get on the oven surfaces, does not burn there. No unpleasant smell and no need to clean the oven.

Würde ich nie so machen, so viel Fleisch eher 5 Stunden bei 80 Grad Bräter mit Deckel backpapier weglassen

Looks great! Bur 160°C for 1.5 hr seems like a low temp for a short time for a pork shoulder cut
you can turn yours into charcoal, i have no problem with this temp or time..
This piece of meat was only 1.3 kg (less than 3 lbs) so it'll cook fast. Also it's tightly wrapped so it will reach safe internal temps even faster. However I wouldn't eat it without probing for temperature first.

Sehr interessant das möchte ich sehr gerne auch selbst versuchen, zwecks den möglichen Zutaten ist es natürlich sehr variabel daher ist es empfehlenswert etwas zuzufügen oder etwas weg zulassen.
Ich werde mich an das Rezept halten und dann werde ich für mich selbst "verfeinern" wie es mir am besten schmeckt

Warum stellen sie das Fleisch in den Kühlschrank ? Mariniert muß es nicht für den angegeben Zeitraum in den Kühlschrank . Außerdem brauchts ja fast eine halbe Stunde im Backofen um wieder auf Zimmertemperatur zu kommen .

I'm going to try it with a tough, chewy, chuck roast. Seems all the water would dry up out of the parchment before the cooking ends at 1.5 hr. although the roast should release enough juice/water to keep the parchment wet/moist.
