      To be fair, I support a small 155 year old local maple syrup place that still makes theirs in small batches over open fires in truly ancient iron pots.
      Naturally smoked, and honestly, some of the best maple syrup I have EVER had, and I've lived in 5 countries on 3 continents in the last 40 years...

    All American recipe:
    1 egg
    1.5 cups of milk
    Separate bowl:
    2c flour
    1/4c sugar
    1tsp salt
    1/4 tsp baking soda
    1tbsp baking powder
    Add milk mix into flour & whisk in
    2tbsp melted unsalted butter
    Mix and make them pancakes
    (I did this for myself because I reference this recipe often 😂)

      @@vkh1088 Exactly! Plus cups only complicate things. A cup of flour is different to a cup of sugar. And a cup of white sugar is different to a cup of brown sugar?? Too confusing.

      Yes, this! Always a touch of vanilla ☺Wee vary our milk as well...1.75 cups seems to be our preferred sweet spot. It also takes very well to additional flavors/spices (i.e. pumpkin spice, cinnamon, etc.)

    I made this recipe using soy milk + a tsp of vinegar to make a buttermilk and 2 tbsp of oil instead of butter. Turned out pretty good!! So a dairy free version snaps too! 🥰

    FWIW, Japanese people don't make those types of pancakes at home for the most part. They're sold in specialty restaurants as a dessert option. The type of pancakes Japanese people make at home (on the rare occasions that they do) are usually from a boxed mix (Morinaga hot cakes is pretty popular). So, they tend to go for the same sort of pancakes that Joshua recommended here.

      Yeah, I was going to say I've never even seen these souffle thingies before, and my wife even had to really think about what it is. We eat the same pancakes here as they do in the US and Europe, and crepes are probably more popular here than either of these things.

    The regular pancake was perfect. This is my new go to. So easy and you don't need alot of ingredients. Lends themselves perfectly to add-ins as the don't take forever to cook but also let the add-ins sink in well. Not dense or think, not too fluffy or crumbly, just...perfect. Thanks alot!

      It seems excessive if you don't have a smoke gun, but once you get a smoke gun and just a bag of nice small wood chips, it's scary easy to smoke anything... And you'll want to smoke everything.

      Flavour vise it would be Lays. It has like 1500+ flavors. Variety wise it would be bread, as it is a staple food everywhere and every one makes it differently and one areas has many varieties like baguette and croissants in France.

    I kind of feel tempted to share some info about Russian/Eastern European pancake varieties, maybe someone will be interested to try them :)
    So we've got syrniki, also called tvorozhniki (syr means cheese in Russian, and tvorog means cottage cheese), and those are fluffy/creamy (yet simple to make) cottage cheese pancakes.
    We also have buttermilk pancakes more similar to American ones - oladyi or oladushki. They are fluffy too, smaller than American ones, made with milk, kefir or other milk products. There can be different variations of oladushki - with apple, for example, or sour ones with zucchini or pumpkin. We eat oladushki with sour cream, jams, honey.
    And, of course, we have blini or blinchiki, which are thin pancakes like crepes, and we also eat them with all sorts of fillings - sour cream, jams, honey, caviar, meats, cottage cheese.
    So pancakes are a big deal in Russia and Eastern Europe, it's basically a national dish))

    I’m dairy free and had so much trouble finding a good pancake recipe. They would not be fluffy and light. But this recipe is really good I made it with almond milk and vegan butter instead and it was delicious, light , and fluffy! Thanks Josh

      @@jeptisanda try to make sure your ingredients are room temp and let the batter rest for a bit. Your leavening agents could also be expired/not active.

      Honestly it does not have to be room temperature. I just pulled it out on my fridge and I just used cups and used oil instead of butter and it came out great

      ​​​​​@@jeptisanda Kent Rollins has the best pancake recipe, I've found. I use half of his measurements to make 7 (1/4 scoops of batter) pancakes. The half recipe I used today: 1 1/4 cup flour (sifted), 1 teaspoon of baking soda, 2 teaspoons of baking powder, 3 tablespoons of sugar, 1 teaspoon of salt, 1 egg, 3/4 cups of whole milk, 1 teaspoon of vanilla, 2 (or more) tablespoons of honey. Mix wet ingredients separately from dry ingredients then mix together. After mixing, let the batter sit for 5-10 mins. If the batter bubbles a little while it rests, you're good to go. TIPS: Be sure your baking powder and baking soda are fresh. You can test the freshness of baking soda by taking a little baking soda with a little vinegar; if the baking soda vigorously bubbles once the vinegar is added, it is still fresh. I hope this helps you as much as it helped me. I've failed pancake recipes many times but refused to give up. Today I achieved victory with this recipe. 🙌

    Usually when I make pancakes, I do the all American recipe except I beat the whites like in the soufflé version. That I would recommend over either other recipe. It’s a little bit more work, but results in fluffy, airy pancakes.

    Not sure if Josh will ever see this, but thank you for this recipe for American Style pancakes! I just made them earlier this morning and they were un-frigging-believably good!
    A little backstory--this was my first attempt at homemade, from scratch pancakes. If I had wanted pancakes previously, I did the ol' boxed mix. I had come across plenty of pancake recipes online before and I am sure they are very similar or the same as yours. But, something "clicked" for me after watching your video and I thought to myself, "I can do that!" Granted, I have been on a cooking binge for the past several months. So, part of it could be I have more confidence in myself and my cooking skills. I don't know what it is, but in the end I had some of the best pancakes I have ever had just a few short hours ago.

    As someone who lives in Japan, souffles pancakes are inconsistent here. Some are hard and just decorated with loads of sweets; and there are some really good ones.
    I have a feeling people just like taking pics of them and upload to instagram.
    Nonetheless, the best pancakes for me are the old fashion american buttermilk pancakes.

    This is my favourite pancake recipe. A lot of times pancakes are too soft or get mushy when you add maple syrup, if those pancakes are a soft cloud of pancake goodness than Josh's are more like a nice pillow.       We lived in Japan for 10 years and they are very good. I think it’s the same as anything it depends on who makes it. I really would pick any Japanese pancake I’ve had over American style.

    American Pancake
    Dry ingredients:
-2 cups of all-purpose flour
    -1/4 cup of sugar
    -1 tsp of salt
    -1/2 tsp of baking soda
    -1 tsp of baking powder
    Wet Ingredients:
    -1 egg and 1 1/2 cups of milk
    Mix everything together and add 2 Tbsp of melted butter

    For anyone who does want to try making the soufflé pancakes, while Joshua's recipe is brilliant it's not exactly the way it's made in restaurants, which has an extra ingredient that makes it a lot easier. They actually add a stabiliser to the egg whites, which makes them much less likely to deflate. I'd recommend watching Ann Reardon's video where she debunks Tasty's fake recipe, adds in powdered egg white to make the egg whites much more stable, and cooks it in the oven so it's much lower effort.

      Yeah no. Japan here. They don't add powdered egg or "stabilizer" in restaurants. Not even sure those ingredients are legal tbh lol. Josh's method was spot on. Also, this is more of a desert dish here so the shops that make them typically specialize in them.

      @@joeface03 people are not going to understand bc it is primarily Americans watching this vid. (I’m American) American food standards are LOW and the FDA’s standards are also quite low… many people would be mind blown to know that thousands of ingredients legal in US food and drug products are banned in many other countries. The stabilizer in question may very well be banned in Japan…. Just because the FDA approves it does NOT mean it won’t harm your health. “Safe for consumption” means something in a certain quantity is suspected not to immediately kill you. It does not outline future possibilities or what happens when you consume more than what is deemed a single serving.

    I make pancakes almost every morning for myself, my wife, and my two daughters. I love to cook, but I’ve never tried making pancakes from scratch. But once we finish the box mix that we currently have, I’m definitely making some homemade mix!

      they taste literally the same if not worse because it is topped with powdered sugar. Usually the inside just tastes like undercooked pancakes because it is so thick

      Make the fluffy style batter and then make waffles with it. That’s essentially how I always make my waffles, and you don’t have to baby them like that pancake, but they’re delicious.

    I made the regular pancake recipe for my parents and husband they were amazed. Can't recommend it enough! I've tried a few pancake recipes (I don't like boxed pancake mix) and this one has been our favorite.

    Not gonna lie, the last time we made the Japanese Souffle Pancakes we were done. Not worth the effort and time. Maybe we messed them up or something but whatever, we agree with you, not enough of a game-changer to overweight all the fails you'll have making these.       Here at Finland "pancake" is made in oven and is similar thicker item like this american pancake, but size is the square oven pan. And our "pancake made in frying pan" is like that crepe. So americans have fucked it up, pancakes belong in the oven and crepe belongs in the frying pan.
      Well, they messed up football and american football so what to expect..

      @@flevingfinn5885 pancake refers to how it is made in a pan. Though in my language our pancakes (pannekoek) is similar to crepes, just a bit thicker and served with cinnamon sugar. His pancakes are what we would call flapjacks (plaatkoekies). It’s different in every country, it doesn’t mean they fucked up. You probably have a different name for it in Swedish or Finnish that means something different.

      @@christinevanzyl3106 American flapjacks are made with corn flour or corn meal and are basically pancake shaped cornbread. Actually I like them more than I like our pancakes. Syrup is too sweet for me that early in the morning.

    "It's not worth the effort" is an unexpected verdict from a guy who just advised me to spend 90$ on a smoking gun, so I can make my mapple syrup taste better.
    Does anything worth the effort tho? We could live on canned baked beans and tapwater, and wouldn't have to do anything. How comes this is where the line is?

      However It's interesting how different we make pancakes in Europe. In central Europe traditionally we usually use different kinds of jams, walnut or poppy paste and chocholate cream. The poppy one is my favorite, but I had been told that it's strange by foreigners.

    Watched this with my sister and she said "I want pancakes now" and I suggested we make them so now we're making the "regular" pancakes. Will update afterwards.
    Update: They were awesome! Great basic pancakes. I always thought you had to add vanilla to pancake batter in order for it to taste good but these 100% do not need it! My aunt, even now, keeps saying that they were so good!
