My mother lived through the war in Czech and Bavaria. The madman's henchmen ripped My grandmother's earrings out of her ears. My great grandfather was a forester during this period. Sometimes my mother's family shared a single potato. When they were fortunate enough to harvest an animal nothing went to waste. I have my grandmother's and mother's cookbooks. I have two very close friends that I regularly help process cattle with, and I worked at a neighbor's father's poultry plant for a hobby in the 70's. Most folks these days haven't a clue where to begin --- I actually have about 25 lbs of oxtails in the freezer -- some will be smoked and some will be simmered into ochsenschwansuppe. Lobsters were once fed to prisoners and thrown into gardens for fertilizer. My mother in law was at our house years ago when I was cleaning squid. (It was probably 39 cents a pound back then. She asked if I used it for bait. I replied that I did but this batch was for dinner. She, my wife, sister in-law and several others, enjoy many odd foods that they had never imagined eating. Those vermin weren't stealing for sustenance, somebody behind the scenes provided a shopping list. Some countries still take off a hand -- after the second offense it's awfully difficult to steal
@@bobpaulino4714 making my point with a tragic story. I agree about the shopping list, it's probably a illegal street vendor, it probably won't be a butcher, reseller, and even a restaurant has to explain where product came from at some point in the accounting process. The only way to cook up 100lbs of meat and get rid of it quick is as street meat.
What ? You wayyyy off on that one . When rich or well off white people started eating them that's when they went up. Black and poor people been eating them for over a hundred years.
Doesn't make sense. Oxtails are popular because of social media, UA-cam, etc., which has exposed them to a wider population (primarily white people) - a population who had previously considered them bad cuts of meat, when they were never *actually* bad cuts of meat. It's a very tender, succulent cut. As a result of the exposure to this reality, that cut is now considered desirable. The current economy is much better than at past points, when oxtails were not eaten by the wider population. There were times when the economy was in shambles (i.e., the Great Depression, recession in the mid 70s-early 80s, etc.) and the mainstream population wasn't eating oxtails. There's no correlation there.
I don't know....makes me feel a bit sorry for future generations. The standards have been lowered on what should be appropriate. This is cool for adults who have their own channel. This is bad, that the national news is using this language.
Oxtail browned and stewed, with peas and rice, cabbage and plantains. A plate like that is 40$. And you get some sorry ass tails. My wife learned how to make that plate like a pro. So we save that money. We don't go to grocery store for our meat any more we go to an actual ranch and buy from them directly. I did not know that we can do that until one of my church brothers put me on. Its a better way.
Try $17.99 a pound here in Sacramento,CA for Oxtails. There between $40-$120 at restaurants here in the city with a few sides and maybe some sort of bread.Absolutely ridiculous!
Oxtails are nothing but cow tails . People have lost their minds behind something that was once thrown away 60 years ago . I would not waste my hard earned money on this trash .
What a beautiful piece of cultural coverage, with consideration of an affordability crisis from all angles! ♥ The gentlemen interviewed had compassion and heart. The way the store employees were listed off by name as family, with the added implication that a thief could get a little “pepper spray” with their attempted meat theft, was charming. - I grew up powdered-milk poor; if it wasn’t milk from our goats. It’s a travesty that accessibility to food is so impacted by a culture of gentrification; up-pricing what used to be affordable. Goddess Help Us.
All these ppl on social media showing how they make them,is the reason prices have went up . Plus all that meat on the hood of that car is GOING to the trash, because the store Can't take it back.what a waste hope they give it to a food bank before it's goes bad
I haven't had oxtails since I was in college and been almost 50 years now. I don't condone buying stolen goods and I don't condone being robbed at the cash register, either!
The worst part of oxtails it is mostly bone. Your paying high prices for BONE!!!!! What makes the prices high is supply and demand. When the beef industry doesn't have enough to meet the demand it will go up on prices in the store. Stop buying BEEF!!! You will see pricing go down. OxTail not so much. I have eaten them myself and they are very tender and delicious. My father had his own meat market and sold Ground Chuck at $.99 a pound in 1970s. The population growth is overwhelming since the 1970s and that is why prices are so high. Not enough to go around.
2023, When my grandmother was a child parts of the chicken, pigs and cows were throwaways. CHICKEN 1. Wings 2. Back 3. Feet 4. Gizzard 5. Heart 6. Neck PIG 1. The Intestines 2. Feet 3. Ears 4. Tail 5. Head 6. Shanks 7. Neck Bone 8. Ham Hocks 9. Skin COW 1. Tail 2. Cow's hoof 3. Neck 4. Tripe/Cow Stomach All of these foods are now marked-up. The white people regarded these part's of the animal as throwaways. The slaves took them to feed their families. Islanders, African-Americans have been cooking these foods for years. Now they have become expensive commodities.
Is the damn shame that the price of oxtails and chicken wings are so damn expensive now they used to be some of the cheapest animal protein you can buy in the store
the price is going up because of internet attention. the popularity of jamaican cuisine and soul food through the internet has made a poor person's cut of meat expensive.
I make ox tails about four times a year. Carrot, okra, potato and fried plaintan over rice. Seasoned with garlic, basil, bay leaf, onion in a crushed tomato and fire roasted tomato sauce.

The price of OxTails has always been one of the Major Economic Indicators used by the wealthy and wise. When Ox Tails are food things are going bad.
