    Chinese sausage is so good. I eat for breakfast with garlic fried rice and egg over medium. Your fried rice looks amazing.

    Tried this recipe but used chicken and minus shrimps. So good couldn't stopping eating 😋. What brand of Chinese sausage did you use? Looks very lean compared to what we have here. Cannot use freshly cooked rice. Tried once but it ended in a mushy mess though still tasty.

      Hi Pretty Catmint, So good to hear that you have enjoyed the fried rice until couldn't stop eating.😋 For the Lap Cheong I don't really know the brand as it's all in Chinese and I can not read it. However, what I know is that it's imported from Hong Kong and it contained a bit of brandy. Yes, normally a day of leftover rice is best for cooking fried rice. However if you really don't have yesterday's rice you can cook the rice with slightly less water than normal and once the rice is cooked take it out and spread it on a tray and leave it exposed for about 15 to 20 mins to release moisture and dry it. I did that quite often actually.

      Hi Carol Rajan, Yes, sure you can put any vegetable that suite your taste. Long beans is one of the veggies that I like to put in fried rice. However I recommend cut into really thin slices or else, if it is a thick slices it needs to be cooked first before putting it in the fried rice. Furthermore any leftover fried rice with long beans can't be kept as it turn bad very quick. I hope this helps.

    Will it taste nice if I replaced the pork with spam? Or will that be too salty?

      Hi K C, thank you for the comment 😀 Yes, spam would be saltier than pork, so you may want to omit the salt, and reduce the light soy sauce amount. I would suggest to add more salt or light soy sauce, to your preference, after tasting the noodles at 4:39 😀 Happy cooking 😀
