Absolutely elegant and obviously delicious. As a Mainer, raised in the lobstering business, I'd like to make a suggestion about cracking the tail open. If you hold them with one thumb to either side, with the underneath facing you and the flippers down, it's very easy to pull it apart by spreading the tail open. The other alternative is to cut right down the underside with kitchen shears. Either way prevents crushing the meat or risking shell shards in it. Happy Holidays to you and yours! 🎄
Oh Teresa I love that tip! Thank you for sharing! I grew up in CT and miss all these wonderful lobster dishes! It's still such a challenge to find a good lobster roll here in Los Angeles! Ha!
This is not a bad idea for a Saturday evening meal for just a few adults who aren't picky and don't need a ton of food (like the teens who open a full fridge & freezer and lament there's nothing to eat in the house). This is a lovely, not overly produced/prepared, meal that will satisfy along with a drink, salad, and dessert, yet can foster last minute entertaining well.

Rana actually makes a lobster stuffed ravioli! I’ve made a sort of primavera cream sauce to serve over them that’s delicious. I tried a browned butter sauce, too, but after a cream sauce? No comparison! 😀
Okay, now I feel really silly! I missed that you were using the lobster ravioli! For some reason I thought you were putting the lobster sauce over cheese ravioli! You must have been shaking your head, wondering what I was talking about! 🤪🤪

Beth, It was such fun to be at the kittch chef's table with you and others last week. I made this lobster ravioli dinner on Saturday night....delicious and easy to prep ahead and then finish up while guests were having drinks. They will certainly be on my 'special' meals rotation....

The best lobster ravioli I've ever had was at a restaurant on Via Veneto in Rome, and I've never been able to duplicate it.

i've had store bought lobster ravioli (costco) before and it's delicious. Easy way to make a fancy, delicious dish at home, it would be an easy way for me to cook for a date, with a nice dash of pepper and shredded reggiano on top.

I have been following for a bit now & can easily adapt her recipes to our families 3 eating styles.

Beth, I know this isn't a recipe about cookies but I am a failure at baking. I made oatmeal raisin cookies this morning and they weren't too bad but then the chocolate chip, wow, what a mess. I think you're supposed to get 48 out of a batch, I got 24. I put them in the frig to chill them and I used baker's chocolate instead of chips, mistake number one. The dough was a bit dry so I added another egg, still not moist. I made the rolled the cookies and put them on a baking sheet to bake, they were huge and a weird consistency. I could never make chocolate chip cookies. I want to attempt to make the chocolate chewy cookies but I used up all my baker's chocolate so I have to get more, that recipe scares me. My daughter is a great baker, she makes so many Christmas cookies and among them are candy cane cookies and Lindsay tarts, delicious. Me on the other hand, no good. My mother, God bless her, I don't know how she did it but she used to make so many home made pies and so many different varieties of cookies, I can't even make chocolate chip. HELP
hey i’ve succeeded at making beth’s choco chip cookies so maybe i can help? the number one thing i learned is to keep beating the softened butter and sugar until it becomes like a fluffy frosting, almost. temperature is really important so don’t let your pan or the dough near heat before baking, and make sure your butter is softened, but not too softened before beating too! another thing i’ve noticed is that oven callibration is real! hope this helps!
Oh no! OK this is one of my easiest cookie recipes. It’s for chewy, oatmeal chocolate chip. It’s really foolproof start with this recipe and let me know how it goes! Yes, all the tips below are great too. You can do it! Keep me posted.
