I made this soup with regular pumpkin, one red onion and 3 gloves of garlic, and it came out delicious! Very creamy. I just made those few small changes, but overall I followed step by step. Very easy and simple to make.
First time making pumpkin soup and we love it. Making another batch this evening. Our first batch was vegan, our next will use homemade chicken stock and cream. We will use this for years to come. Thank you!

I watched this just last night and this morning I've decides to make one but with few modifications. I used local squash, I did not have any immersion blender so I chopped everything finely to make a puree base instead, and I used celery leaves for the garnish instead of leeks. It taste really gooooooooood 😊
Thank you Jack for these laconic yet clear instructions! Just finished cooking the soup by this recipe. I used chicken stock (boiled with onion, carrot, and bay leaf), the soup has come out JUST WONDERFUL. Possibly the tastiest thing I've ever made! I also added a bit of curry seasoning (curcuma in particular). The only thing I did wrong - I decided that I added too much stock and poured off a bit. That was a mistake, so I've ended up with a liquid puree rather than a creamy soup. But it didn't affect taste qualities at all, but if you face the same dilemma, leave all the stock!
To save a watery soup like you did I can give you some smallhints. If you have 1/4 cooked left over rice or a cooked potato you can add it blended to a fine mush and add to the soup that turned out with more stock. Curcuma is just Turmeric. Curry powder just 1/2 tsp sauteed with butter brings out the flovor even better. I am a chef myself and these are our little tricks we have up our sleeve. Hope it helps as cooked rice thickens any soup. doesnt alter the taste at all.
