- 52 vanilla wafers, finely crushed (about 2 cups)
- 3 Tbsp. butter or margarine, melted
- 4 eggs, divided
- 4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
- 1-3/4 cups sugar, divided
- 3 Tbsp. flour
- 1 Tbsp. zest and 1/3 cup juice from 2 lemons, divided
- 1/2 tsp. vanilla
- 2 Tbsp. cornstarch
- 1/2 cup water
I made this recipe today and turned out really good. I made 1/2 the creamcheese filling but kept the lemonglaze the same, this worked best for me. I made the crust out of digestive cookies. I can really recommend this recipe, but 32 oz creamcheese is way too much.
You can also top it with lemon curd
Instead of Vanilla Wafers, use Grahame Crackers. It’s amazing. Best dessert ever.
I'm not a big fan of cheesecake but I'm a HUGE fan of lemon anything and that's why I tried this. It takes a LONG time to make because of all the cooling and refrigeration. It was good but as soon as I bit into it, I wanted more lemon flavor. I made 1/2 the recipe and kept the lemon topping the same so there was double the lemon but it still wasn't enough for me.

I made a plain lemon cheesecake from another recipe before I found out THIS recipe. So I just use the glaze recipe here to put on my plain lemon cheesecake. The glaze is awesome! Makes the whole cheesecake so yummy and lemon-y. Shall try the full recipe here this weekend.

basicaly you can use ANY kind of Cookies or Biscuits
Step it up a notch and use Biscoff cookies for the crust!

The recipe seems off , from the video it appears you used 2cups of lemon juice but it is not stated in the recipe.
aaron wong that's true, when I look at the recipe, it didn't state 2 cups. and the amount of corn starch doesn't make the the lemon liquid stick together, so watery. I need to pour out the lemon out of refrigerator after one hr and add more corn starch
I think she added only as much lemon juice she got from two lemons.
Can I use meringue in place of the lemon glaze?

I'm sure you can it will just be a fluffed bar cause there is more air beat into whipped spreads.
