We visited the New Jersey factory to see how Junior's third generation is keeping tradition alive amid shrinking margins.

Kudos to the man. He does not budge, unlike many, and he would not change the recipe. A good recipe is so precious. We still keep Great-grandma's recipe for bean stew (it smells divine despite only adding some fried red pepper, flour and spice) and tomato sauce recipe. We make about 250 jars of it each autumn and every time it is gone by same time next year.
its relatively easy to get through hard times when you are selling a product that have been already selling itself for decades. Customer loyalty is really insane in USA when its about certain products that kinda represents the American identity as far as i can see from outside of it. And i've met many Americans valuing a well-made batch of cheesecake like they value a bald eagle :)

Damn the fact they in supermarkets is definitely what saved them during COVID-19. I’m from Brooklyn and anytime it’s a holiday I always go grab a cheesecake at juniors. It’s my mother’s favorite. Downtown BK has changed and renovated a lot over last 10 years but nobody can touch the original juniors on dekalb and Flatbush ave. 👏🏾

I had my first Juniors cheesecake when I was 4 years old. I’d never had a cheesecake before and it made me love them. I hope you continue to do well Juniors. Much respect for keeping the recipe and not changing it.

I worked 7 years for a company in Sanford Fl that makes cheesecakes from August to mid December the plant runs 7 days a week, pushing out an average of 135,000 cheesecakes a day they have 5 mixers that are bigger than two refrigerators they mix the crust in mixers that you could stand up in and not see over the top
Here are some examples of things they use
48,000 lbs of flour in 2 days
48,000 lbs of sugar in 3 days
24 pallets of cream cheese in 1 day

I have heard of Junior's before.It's actually on my list to eat at when I go to New York sometime. The cheesecakes do look good, some of them. I am more found of the chocolate ones. I wonder how they are compared to the Cheesecake Factory cheesecakes? The Cheesecake Factory makes some epic cheesecakes.

I work at Whole Foods, and we sell a vast majority of products as Junior’s! We sell their carrot cakes, red velvet, cheesecakes, and chocolate fudge cake (sometimes when we get that one in). A fun fact about the strawberry/raspberry swirl cheesecakes. To do the factory swirl, they asked the employee with the most unique swirl to replicate it with technology that copied the template of that swirl exactly through a computer to replicate it for the machines.
They then fired said employee as they were no longer needed...

He comes across as the typical pompous blow hard that cares about nothing more than widening his profit margin way before loyalty to employees that have been loyal to him and were a massive factor in how those cheesecakes became "famous". I’ve only tried juniors cheesecake twice and that’s when I found them in Costco. I’ve never been a fan of cheesecake until I tasted that one and it’s literally the best thing I ever ate for desert. I bought 2 of them and ate them all by myself. I still dream of that cheesecake

how did a cheesecake without a crust taste? 😄
I still use my grandmothers recipe. She gets a long pan and puts down a graham cracker crust. She then makes her cheesecake. She bakes it about 40 minutes and pulls it out. She has sour cream, some sugar and lemon juice mixed together. She tops the cheesecake and puts it back in the oven. Once it is done you not only have to let it cool, it is best served when it comes out of the fridge ice cold. With a sour cream topped cheesecake, you don't need to top it with fruit or anything else. There is never one piece left after a family reunion and last time we made 4 of them. Cream cheese in Ohio is about $1.59 for two bricks, 8 ounces each.

As an Englishman these whole cheesecakes are still about 5x larger than we typically have in the UK and the individual portions are 3x. This video reminds me of my trips to NY. Such a great city.

Definitely a unique cheesecake. Love the fact that the base is sponge cake (not graham crackers...although equally delicious). I've made the Junior's classic cheesecake recipe with the strawberry topping. Lots of steps but worth it.

I'm sure you'd disagree, but everyone I know -- including my pastry chef friends -- refer to what you're describing as Italian cheesecake (Torta di Ricotta) and it often contains fruit or candied fruit. It's native to Italy and made all over the world, even NY. Millions of native New Yorkers eat cheesecake, and they get it from Junior's, Lindy's (now closed, RIP), Eileen's, etc. I know this because I lived in NYC and still have family there. So pull up a chair, take a chill, and enjoy yourself a nice piece of creamy NY cheesecake made from Kraft Philadelphia cream cheese. It's delicious.
Wholy shit only 2 pounds of cream cheese and almost 2 cups of sugar!? I use 2 pounds of cream cheese in my recipe but only 1 cup of sugar!! Plus I add 1/2 cup of sour cream, that's what makes it extra creamy! 🧡🤗✔

Jr's was the first cheese cake I ever had at age 9 in 1994 mine was strawberry still my favorite flavor though I also love Caramel turtle cheese cake and Carrot

Ah, I was JUST telling a friend about Junior's - I remember the night I discovered them in NYC just off Times Square - amazing!
I just bought my first Junior's cheesecake from Publix this week. Now I understand why it was so small. I didn't think about the impact of inflation on their production but I completely get it now. I should have known since we ran out of cream cheese in this part of the state and the price of eggs has gone through the roof! Though I still prefer buttery graham cracker with NO cinnamon on the bottom of mine, I can respect keeping the recipe as it was created. This is still, by far, the best cheesecake I've ever had.

Brooklyn native here. By far the best cheesecake ever. When I was pregnant, I lived off of their salmon, mashed potatoes and pancakes. Shipping a cake to myself for my birthday this year.

Think it was more about attacking kraft
They are very Krafty
It was a ransomware attack. Something gets into a business IT system and locks up all their files and databases etc - company can't do business for long if they can't do their accounting or ordering or accept orders. Then the hackers send a message for the business to pay a ransom - millions, sometimes - for the hackers to provide a code that will unlock everything. So it's very lucrative.
The most bizarre thing about it is that most of these ransomware hackers seem to be pretty "ethical" extortionists - nearly all the time, when a business has paid up, they get their data back. However, like any kind of ransom, law enforcement is telling businesses to not pay these ransoms. If you have good backups and good IT people, you should be able to get your data back. Then again, if you had really good IT people, it'd be less likely for the attack to succeed in the first place.
So don't click on random email attachments, people! And don't pick up random USB drives you find lying around outside the office and plug them into your office PC! (Yes, I worked at one place where some security testers left 8 USBs lying around outside, and 7 of them got plugged into office PCs. This convinced the bosses to allow us to prevent USB devices from being read on most PCs.)
Some people just want to watch the world burn..
Any company where constant up-time is valuable is a good target. the product doesn't matter, just the fact that downtime is costing someone thousands of dollars makes it an opportunity for ransomware.

WOW! Their whole cheesecakes start at $60 USD each, or $95 AUD. that's CRAZY prices. Nearly double the price we'd pay for similar cheesecakes here in Australia. How can Americans even afford them at those prices?
We can’t. Even before inflation started to hit such highs, a lot of people were in debt. Anecdotally, it seems that a lot of people start to lose grasp of the weight that debt has and they start to get comfortable. Comfortable enough that they often make frivolous purchases, such as an expensive cheesecake, even when the money isn’t there.
Lmao that's a whole week of groceries for me. I'm sure the cheesecake is amazing but that's way too expensive.

I have the Juniors Cheesecake Book. I have been making cheesecakes from this book for 14 years now. People love these cheesecakes. They are wonderful to make and eat!!!

Impressive how long they have lasted. God, I miss cheesecake so much. I have a double whammy of gluten and lactose intolerance, so I can never try one of these amazing cakes without pain and suffering. I might at least see if I can find them in my local Stop & Shop, since he mentioned them as a retailer.
you can try a gluten-free vagene cheesecake. not the same thing but there must be good recipes out there that should scratch the itch.
Im not sure if they easy to come by where you are but my mother is lactose intolerant and has a pill she can take when she's invited somewhere that doesn't have many vegan/dairy free options. Has come in handy for a few events she's been to where you'd expect more variety but yeah it works.

You can get a pretty decent dupe with coconut based cheesecakes.
@@chupawup4517 I have tried the pills before, but I think my lactose intolerance is different from the conventional. I do have prescribed medication for it, but it can still hurt despite it.

I lived a short distance from Juniors in Brooklyn and as a special treat I’d walk over there, have a great meal, and of course finish it off with a piece of there cheesecake. Man I miss those days. I retired and moved away so now it’s only a memory.
Big changes done there in 2015 with new factory and machinery… but still no compromise on the recipe. Secret to success, never give up quality

This here is an incredible example of how to successfully modernize, you don't replace all the humans so you don't have to pay them, you use technology to make the amount of work you want done actually doable. Then you give your employees everything they need financial & benefits wise so they want to show their value and work to your standards. Contemplate how the Roman Empire fulfilled the role of the beast from the sea in Revelation 13 over the course of 1260+ years. Revelation 17 confirms that the beast is in fact Rome. From this we can conclude that A) Jesus is the Son of God and can predict the future or make it happen, B) The world leaders/nations/governments etc have been conspiring together for the last 3000+ years going back to Babylon and before, C) History as we know it is fake. You don't really need to speculate once you start a relationship with God.
Can't get a response from God? Fasting can help increase your perception and prayer can help initiate events. God will ignore you if your prayer does not align with His purpose (James 4:3) or if you are approaching Him when "unclean" (Isaiah 1:15, Isaiah 59:2, Micah 3:4). Stop eating food sacrificed to idols (McDonald's, Wendy's etc) stop glorifying yourself on social media or making other images of yourself (Second Commandment), stop gossiping about other people, stop watching obscene content etc. Have a blessed day!

To all who do not live in New York, JUNIORS IS NOT NOT NOT NEW YORK STYLE CHEESECAKE. No one in New York eats or likes cheesecake made with cream cheese. Cream cheese cheesecake is something that people who are not from New York think is from New York because New York Jews Bagels Cream Cheese or whatever reason. All real good New York Cheesecake is Italian Style and made with ricotta cheese NOT cream cheese. Millions of Juniors are sold to idiots from out of state who have been bamboozled into thinking New Yorkers eat that Juniors garbage. Juniors is total crap.

The refusal to change recipes is the nicest thing. I enjoyed some places, then tasted the food change for the worst. It is great to still have the taste you love.

I live 15 minutes from their factory and they have an outlet retail store where you can buy all kinds of cakes and cheesecakes that are slightly imperfect for such cheap prices and it's soooo good!! You can get a 10" cheesecake for $9!! The slight imperfections are cosmetic only, like a few crumbs from the crust might get on top, just a few crumbs, I can deal with that!! Lol!!

Its great to see places like this and some of how its run, sadly we live in a world were prices keep going up & profit margins get less for some but more for others eg. banks ...Yet only a small percent actually get wage increases and such to bring back a level playing field.
Food has gone up 7% YTD in NZ even after the government stepped in to stop price hikes, so shows whos really in control
