GOAT CHEESE TARTLETTES WITH ONION JAM
Makes 24
Ingredients:
4 oz (113 g) of crumbled goat cheese
2 sheets puffed pastry
2 tbsp ( 30 ml) olive oil
1 sweet yellow onion
1 red onion
2 tsp (10 ml) balsamic vinegar
1 tbsp (15 ml) honey
salt and pepper to taste
1 tbsp (15 ml) freshly chopped rosemary
Method:
Preheat oven to 400 degrees. (205 degrees C)
Slice onions paper thin. Saute in olive oil until soft and caramelized. Add vinegar and cook until evaporated. Add honey, salt, pepper and rosemary.
Cut out circles of puff pastry with a cookie cutter. One that is at least 3 inches wide. Set circles into mini muffin tin, creating little tartelettes.
Sprinkle ½ tsp of crumbled goat cheese into tarts, and top with onion mixture.
At this point you can cover in foil and freeze if not using right away, or pop in fridge until the day of your party.
Bake for 10-12 minutes until pastry is golden brown and cheese is melted.
Allow to cool slightly before serving.

Oh yes you could. You could mix together 1 brick of cream cheese, 1/2 cup of confectioners sugar, 1 tsp vanilla, and 2 eggs. Pipe that into the tartelettes with a pastry bag, and bake for 15-20 mins, then top with fresh blueberries or raspberries. That would be delicious!

Hmmm, you could bake them with the goat cheese, and then top with some fig, or apricot jam, for that sweet and savory combo that the caramelized onions provide, or for something all savory you could top with some sun dried tomatoes or pitted olives that would be good too!

Sure that would actually be really good. The onions are sweet because of the honey and balsamic vinegar so it would be a good counter balance to the salty cheese. Enjoy!

When i do puffpastery in this pan i cut the peices small squers so i dont waste any as in the case of cutting them circles :)

Sure you could skip the goat cheese and put shredded mozzarella and cooked crumbled Italian sausage, or you could do mozzarella, tomato and basil, Or you could do goat cheese, mixed with fresh chopped rosemary and dried figs, or feta cheese and sun-dried tomatoes, or Swiss and ham, the possibles are endless :)

Sure it's really easy. Buy a pumpkin suitable for eating (we call them sugar babies, but not sure what they may be called there?) Just avoid those decorative pumpkins. Clean them out of the seeds. Place on a foil lined cookie sheet an roast cut side up for at least 1 hour at 400 degrees F.Then scoop out the flesh and mash with a fork. That easy :) Enjoy!

I think I might have this but not this type. In other recipes with veggies, it makes me want to eat them! I used to be picky about veggies but everything you make is so good!
Sure fresh mozzarella would be great. But maybe top them with the same "jam mixture" but use tomatoes instead. And top with a dollop of pesto! That would be great! Where are you based? Italy? :)
They came out fab... used a soft cream cheese instead but it was nothing but amazing... lots of love all the way from Sri Lanka... Loving every minute on your channel..

Oh yes, isn't it sweet :) I found them years ago at Pottery Barn, but you can get similar ones online. I just added a source in the description. Linen cocktail napkins definitely "set the tone" for an elegant party. Enjoy!

Made these on Christmas. They weren’t a big hit. So most of them sat on a plate in the coffee table. When no one was looking the dog ate the whole plate of them. Oh well, at least they got eaten! 🤣

Greetings Beth from the other side of the globe. Had been subscribed kincommunity and recently yours. Loves all your video and fantastic tips. Goat cheese is really difficult to find in the store near my resident. Can I substitute with either fresh buffa (buffalo mozzarella cheese) or something else?

Do you butter the muffin tins? I didn't see you grease them, but whenever I make anything in muffin tins, they always stick if I don't butter enough. Maybe the puff pastry is buttery enough to slide right out?

These remind me of the Trader Joe's goat cheese & honey appetizers that I would devour!!!!! Do you think these puff pastry appetizers travel well? Seems like they can all be eaten even at room temp, not out of the oven, but wanted to ask you for your expertise! Thanks Beth!!
Well they would travel well in their tin, for under an hour. The goat cheese should be eaten within that time to avoid food poisoning :)

I made this last week and they were yummy, but I ran into a bit of an issue. A few of the puff pastries PUFFED like crazy, dumping out their contents into the oven, lol! Onion/goat cheese mixture everywhere.
Is there a particular brand of puff pastry that works best? Or a certain thickness of sheet? The kind I used felt like it was perhaps too thick and expanded too much. Not sure. Your recipes have always been foolproof for me, so I figured I'd ask why you think this might've happened :-) Thanks for all your amazing videos!

I wonder if this would be good with Feta cheese? Im not a huge fan of Goat.
I think feta would be good! sounds like the onion jam is on the sweeter side so any cheese that compliments sweet would be good. IMO.
