I have made the braided fig Brie four times and we love it. Beth provides such simple explanations that I felt confident I could make the same beautiful creation. Well, it came out beautifully, especially when I realized in Florida with the hotter temperatures if I put the puffed Brie in the fridge for 10 minutes before baking it the whole thing puffed up much higher. Thank you so much for simply showing how to use/score the sheets of puff pastry. Never having used them I had no clue what to do with them (roll out more, bake first????) once I had defrosted the sheets. The fillings were no prob. Great Help!!

I made both the Braid and the Pin Wheels....they were a fantastic hit at a recent Happy Hour with friends....I want to consider the mushroom filled pastry for another occasion! Your directions for all are splendid! Although I didn't make my own puff pastry this time, I know that in the future I will because it is so much fressher!

Thank you Beth!!! I first fell in love with Brie cheese when I went to a gathering at a friends house last year. I had to ask “what kind of cheese is this?” I attempted this with the first Brie I had that I bought from Walmart. I didn’t cut off the white surrounding it and I couldn’t find fig jelly so I used boysenberry and it didn’t taste good. I tried the Brie cheese and it had this strong bitter almost chemical flavor. That is when not all Brie’s are made the same lol so I finally went to Safeway where the Brie was originally from that I tasted and loved and I found fig jelly. AMAZING!!! Even my picky husband liked it lol
