Quick Question? What is the difference between your blueberry, apricot galette tart dough with no egg yolk vs. apple tart, quiche tart dough that has the egg? I've tried your apricot galette and it's really good. Love your outdoor decor.
Great question! My rule of thumb is if I'm making a tart shell that has more structure to it like a tart shell that is fluted then I add the egg because it will help it hold its shape better. If there's no structure and it's more "free form" like a galette, then no egg :) Hope that makes sense! :)
Oh yes you can make the tarts ahead and pop in fridge and then just before serving dollop the cream on top, and dust the stars with sugar and top and serve :) The sugar unfortunately will melt on the stars in you refrigerate them best to do just before serving :) Enjoy!

If you use frozen just thaw first and blot with paper towel to soak up moisture, and then also add 1 tbsp more of flour. Frozen fruit retains a lot of moisture and you'll need the extra flour to thicken the mixture into a nice syrup when it bakes (otherwise they could release too much moisture and create a soupy consistency). Also if you use other fruit just swap out the jam flavor as well (Cherry jam for cherries etc) otherwise all the other measurements stay the same. Oh sure you could do that. Add a drop or 2 to that star dough and roll it out. Or you could place a little melted white chocolate to the center of the star and place a raspberry on top. As the chocolate dries it will harden and keep the raspberry in place :)

Oh sure you could try apple. You may just want to cook the apples down a bit before baking them. Place them in a sauce pan with a little bit of water (1/4 cup, 3 tbsp sugar, 1/4 tsp cinnamon and 1/4 tsp lemon zest). Do this until all the water has evaporated and the apples soften :) then place in your tart shells with apple jelly at the bottom, or a little apple sauce would be great too! Enjoy!

The kind that rolls out (not the kind already in a pie shell, unless of course you wanted to just make a pie which you could do too! :) I really like the Trader Joe's Brand or the Pillsbury one isn't so bad either.

I made these but the crust was salty and the filling didn’t “set” like hers did. Actually she never even showed what the filling is supposed to look like after cutting into it. It did not hold in my pies at all even after I cooled it to room temp and had to opt to freezing the pies for 2 hours so that the filling won’t explode everywhere when I cut it.
With these you can get away with not doing it :) Because they are small and the tarts bake for so long they become nice and golden no sogginess to worry about :)
Great question! The chilling of the dough will allow the dough to firm up so that as it bakes it will crisp up quickly, and brown. If you don't refrigerate it will melt quickly and shrink into your pan and lose its shape :( So best to refrigerate! :)

OOH! Maybe you could do a menu with tuna casserole, bread sticks, salad, et cetera. Not very 'gourmet' but definitely hearty and fun!

I heard that you should pre-bake your crust otherwise it'll become soggy.
