My Favorite Soft and Moist Blueberry Muffins

- My soft and fluffy blueberry muffins are packed full of sweet, plump blueberries and have slightly sugared tops. Today’s post is packed full of tips for getting the fluffiest muffins with bakery-style tops!

Ingredients
1 ¾ cup all-purpose flour (220g)
1 cup granulated sugar (200g)
2 Tablespoons cornstarch
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1/4 cup unsalted butter, melted (60ml)
¼ cup canola oil (60ml) (may substitute vegetable oil)
1 large egg, room temperature preferred
1 teaspoon vanilla extract
1 cup sour cream (240g)
1 3/4 cup blueberries (245g) (fresh or frozen will work, if using frozen you do not need to thaw first, and note that they may leave purple streaks through your muffins).
Coarse sugar for sprinkling, optional (may just use regular granulated sugar).

Instructions
00:00 Introduction
00:19 Preheat oven to 425 (215C) and line a 12 count muffin tin with paper liners.
00:25 In a medium-sized bowl, whisk together flour, sugar, baking powder, baking soda, cornstarch, salt.
00:49 In a separate bowl whisk together butter and canola oil. Add egg and vanilla. Stir in sour cream until thoroughly combined.
01:48 Add wet ingredients to dry and gently fold together with a spatula until mostly combined. Once the batter is about 75% combined, add the blueberries and fold them in as well until batter is completely combined (don’t over-mix!).
02:40 Evenly divide muffin batter into prepared tin. Liners will be most of the way full!
03:04 Transfer to 425F (215C) preheated oven and bake for 8 minutes. After 8 minutes reduce the oven temperature to 350F (175C) without opening the oven door and then continue to bake another 10-12 minutes or until the tops are beginning to turn golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs.
03:44 Allow to cool 10 minutes in muffin tin then gently remove from pan (I like to use a butter knife to gently pry the muffin out of the tin, remember the pan may still be hot and muffins are fragile when they are warm!) and allow to cool completely on a cooling rack.

These taste amazing and are my every other Friday muffins. I make them for the weekend breakfast. I put them in an airtight container and Sunday morning they're still perfect. The other Fridays I rotate between your pumpkin and cream cheese pumpkin filled muffins as they're the families favorites. These blueberry muffins were delicious! I add the zest of one lemon to the flour mixture and baked them for 22 minutes. Came out perfect and my husband and daughter loved them! Thank you!

I made these today. Had already started the recipe and found I didn’t have sour cream. Used plain whole milk yogurt instead. They are so delicious and moist😊

I love this recipe.....a tip for you.....when I make muffins and I know they are going to bake up and spead onto my baking pan (which is most muffins) I spray my pan with Pam non stick spray then put the baking papers in the muffin tin.....they don't stick that way and they come out of the pan beautifully.

Works well in air fryer, and with frozen berries!
time and temperature adjusted (for air fryer) from
425F for 8 minutes to 400F for about 5 minutes
and then
350F for 10-12 minutes to 310F for about 8-10 minutes

I hope you love the muffins! I haven't tried in a convection oven, but typically you would reduce the oven temperature by 25 degrees F (about 15C) and then bake following the same time guidelines. :)

Okay update for this week.. I made this blueberry muffins and another cookie recipe of yours (I will post a comment there as well).. OH MY GOD.. they were so good.. i shared these with my neighbours and they loved them as well.. my boyfriends favourite is blueberry muffins and he was so happy and said they were 100 times better than bakery shops ones (I think the corn starchwas the key it was so soft and moist..yum).. I will be making them again.. love you for these recipes..

I made them exactly as described except that I used a twelve cup muffin top pan treated with cooking spray. No changes to recipe or baking times. I tried posting brand and source of muffin top pan but that post was not allowed.

I honestly am not sure. It could make the crumb a little more open than I like but without having tried it, I can't say for sure how it would go.

It’s ideal, but you can get away with it being cold if all of your other ingredients are room temp :)

Hello! 😊 Can I make this recipe into mini muffins? If yes, what would be the temperature and baking time?
They can be made as mini muffins. Bake on 375F (190C) (you will not change the temperature) until light golden brown on top and a toothpick inserted in the center comes out clean or with a few moist crumbs, approximately 11-13 minutes. You will get at least 24 muffins.
