So they are baking an average 2300 pizzas a day? Maybe 230 not 2300..Doesn't look that big to do that volume. I clicked on google maps link and saw the pictures of restaurant. How are they are baking that much? Doesn't seem possible.
I've been a professional chef for 20 years - and what I love about watching these Korean videos, is the LAYERING of flavors and techniques they use to achieve the end results. I can imagine how each step tastes, and each ingredient adding its little flair to the dish. Marinate in Mustard, Sous Vide, then Slather with homemade sauce, then broil, then smoke, then slice an put on top of an already delicious looking pizza...hell, yes. !!!! :) 😊
Agreed - I could tell by the size of the cuts of carrot/onion/celery that they were going into a stock, but i didn't pick them for roasting it with thyme+anchovy oil first to create extra layers of flavour as you stated. Then adding wine/sugar to this beef+vege stock to produce liquid gold - really huge attention to flavour at this restaurant. Inspiring stuff.

In high school, I had a part time job at a pizzeria. I was in charge of prepping all the ingredients. Dough, sauce, cheese, etc. This video bring back memories of carefree days and my ever lasting love for pizza.
Currently in university working part time at a pizzeria. Also opener and so prep is with me too. Its great, get to learn + I love being able to use a wood/stone oven :)

The one and only thing about these videos that i am impressed with is the cleanliness of this kitchen. The cleanliness tells me that 1) i can eat here without caution and 2) because of the cleanliness i would love the food. If somebody is willing to put the time into keeping the kitchen this clean then they absolutely can cook with the best of them. As a professional myself you"d be surprised with the lax attitude nowadays with some selling food that can be harmful to your health. And that's the simple truth. And the pizza's look KILLER!

"They are generous" and "Their foods are pricey". Can you see the connection? There's nothing "Generous" going on. They're not giving you bigger portions than someone else for the same price. They're just building bigger portions and, expectably, charging enough to cover the costs.

I really admire the discipline of Koreans when cooking. They tried to show how to make even a seemingly simple food like pizza perfectly. Really congratulations.
The details into each pizza is amazing. The preparation of the short ribs for the BBQ pizza must have taken most of the day. I've made my own pizza for 50 years, I'm stepping up my game now. I do my dough the same way, I make mine in a cast iron skillet, fry it a bit on the stove, then bake it, flip it over then add the toppings and bake again.
Indeed, sous vide cooking takes a long time but it tastes absolutely amazing. There is no cooking technique that can match it in terms of tenderness, juiciness and texture. I have such a sous vide stick like they're using in this video at home as well, I don't take it out much because it takes so long but I think I'm going to make me some pizza toppings with it after seeing this video

Let it rise for 30 -45 minutes (second rise), add toppings while the oven is heating up. fry the pizza on medium heat for 3-4 minutes to get the skillet up to temperature and start cooking the bottom of the crust. The edges of the pizza should be bubbling, then put in the oven, I do 450 degrees for about 10 minutes

Great production in this video. Editing, lighting, arrangement, sound. But by far the most amazing part of the whole thing...is what they produce at the end of it. THE FOOD! I would book a flight to Korea for no other reason than to eat at this place!
Koreans seem to have pride in what they're doing almost regardless of what it is, and they're willing to be adventurous and incorporate great stuff from around the world.

What you're tasting is sodium, that's 7-10 days old, sometimes longer. This is hand-made from scratch and if you have taste buds you'll definitely notice the difference.
The food looks incredible, plus it's nice working in the kitchen without everyone on top of each other. Would definitely try this food if I was in the area😋

But I also like pizza from other parts of Italy not just Napoli. In the U.S Americans don`t like Napoletana type pizza very much. Sometimes the crust comes burnt because of high temp oven. And they think it is burnt. And another reason is, they import everything from san marzano tomato sauce to flour from Italy. And this increases the price to $15-20, which more than popular places like pielogy, pizza press, etc. where it costs 10 bucks. But this Korean pizza...it really is disgusting!

I have lived near Detroit and the level and variety of toppings would make any Detroiter / Michigan resident jealous. The cheese pizza alone is insane. I appreciated seeing how they replicated the crust in a way that might be replicated at home.

Genuine questions: Are Detroit pizzas supposed to be so dark on the edges?? It looks burnt to me but Idk I could be wrong. Maybe there's a charcoal effect going on, but everything about the pizzas looks great to me except the black edges. What do you think about that burnt look on the edge?
@@deecee2174 Detroit style has cheese to the edge which carmelizes the mozzarella. The cheese does look a bit burnt instead of golden brown which is more typical of say a buddy’s original pizza.
@@deecee2174 Yeah there's deep caramelization on the edges, but it's not burnt. It's going to be crispy, nutty, toasty cheese. The one thing that people tend to get wrong in other places with "Detroit" style pizza is the sauce. Most places here in Detroit do not put the sauce on the top in a line like you see in so many photos or videos. A few places do, and the chain the originated the style, Buddy's Pizza, does do it that way. Most places around here though still put the sauce directly on the uncooked dough and build it like a normal pizza. It just goes edge to edge. While these are some very nontraditional pizza toppings I have to say I like the looks of them and would love to try them.

Let it rise for 30 -45 minutes (second rise), add toppings while the oven is heating up. fry the pizza on medium heat for 3-4 minutes to get the skillet up to temperature and start cooking the bottom of the crust. The edges of the pizza should be bubbling, then put in the oven, I do 450 degrees for about 10 minutes

What you're tasting is sodium, that's 7-10 days old, sometimes longer. This is hand-made from scratch and if you have taste buds you'll definitely notice the difference.
The food looks incredible, plus it's nice working in the kitchen without everyone on top of each other. Would definitely try this food if I was in the area😋

But I also like pizza from other parts of Italy not just Napoli. In the U.S Americans don`t like Napoletana type pizza very much. Sometimes the crust comes burnt because of high temp oven. And they think it is burnt. And another reason is, they import everything from san marzano tomato sauce to flour from Italy. And this increases the price to $15-20, which more than popular places like pielogy, pizza press, etc. where it costs 10 bucks. But this Korean pizza...it really is disgusting!

1. В ролике видно, что масса теста пиццы 200г, это мало. Тесто толщиной 3 см так как оно поднялось, стало воздушным
2. Хорошее тесто - это 50% вкуса пиццы. Если тебе попадалось только безвкусное тесто, мне тебя жаль, ты не получал полного удовлетворения от пиццы

Genuine questions: Are Detroit pizzas supposed to be so dark on the edges?? It looks burnt to me but Idk I could be wrong. Maybe there's a charcoal effect going on, but everything about the pizzas looks great to me except the black edges. What do you think about that burnt look on the edge?
@@deecee2174 Detroit style has cheese to the edge which carmelizes the mozzarella. The cheese does look a bit burnt instead of golden brown which is more typical of say a buddy’s original pizza.
@@deecee2174 Yeah there's deep caramelization on the edges, but it's not burnt. It's going to be crispy, nutty, toasty cheese. The one thing that people tend to get wrong in other places with "Detroit" style pizza is the sauce. Most places here in Detroit do not put the sauce on the top in a line like you see in so many photos or videos. A few places do, and the chain the originated the style, Buddy's Pizza, does do it that way. Most places around here though still put the sauce directly on the uncooked dough and build it like a normal pizza. It just goes edge to edge.
While these are some very nontraditional pizza toppings I have to say I like the looks of them and would love to try them.
