      I'm Jamaican and I use pimento pepper in my jerk seasoning. We understand that making authentic jerk outside of Jamaica is difficult because of the pimento wood requirement. It's all good.

      Taste of Trini sorry to bother when you put the chicken on the other side for indirect grilling, what is the total time does it take to cook and how often are you flipping the chicken. The chicken looks amazing

      @@garyhall6294 Yes. They didn't take the skin off in the video (see 8:05). However, it is recommended that when rubbing the seasoning onto the chicken, you try to get some under the skin or at least cut a couple of slits into the chicken (with a knife) so that the seasoning really gets in there

    Can I use a mixture of ketchup and bbq sauce in the marinade (instead of one or the other)?
    Also, I plan on making this, but only about 3 cups worth. How many cup measurements does this recipe produce (roughly)?

    Can't get that wood here where I am so what type of wood can be used to cook this do u think because I don't like using charcoal. Maybe a fruit wood like apple, cherry etc ? Thanks Kevin

    Here in the southeast U.S. We obviously don't have Pimento or Allspice wood that we have regular access to. What type of wood can we use like Hickory, Cherry, Peach, or Pecan wood that we can smoke on the coals to give a similar flavor profile? BTW; I LOVE smoking wings! And I love Jerk seasoning even though I am from the southern U.S. Tennessee, and Live in the Atlanta area. I feel that there are A LOT of similarities between Southern Soul cuisine, and Caribbean cuisine. I definitely want to explore this further. Any ideas on the wood to smoke?

    In jamaica we poke the chicken instead of scoring but I guess it serves the same purpose.

      We also had trouble finding it but eventually we did! Just look in the big groceries and you should be able to find it.

      Hey, so I found the "Karibbean Flavours" brand the last time I was there. Check the spice section. It might be listed as Pimento or Allspice.

    Finally. Someone is showing how to prepare breasts for jerk grilling. I wasn't sure what to do with the white meat that some in my famly prefer. Everyone seems to use leg quarters only. THANK YOU !!! I just subscribed.

      I think i didn't get the right balance. Maybe too much greens in mine. I'm kinda disappointed.

      It's supposed to look brown actually so you're on the right track. Remember, the camera and the natural lighting outside adds a different color.
      Once it tastes good, then that's all that matters!
