@@garyhall6294 Yes. They didn't take the skin off in the video (see 8:05). However, it is recommended that when rubbing the seasoning onto the chicken, you try to get some under the skin or at least cut a couple of slits into the chicken (with a knife) so that the seasoning really gets in there

Here in the southeast U.S. We obviously don't have Pimento or Allspice wood that we have regular access to. What type of wood can we use like Hickory, Cherry, Peach, or Pecan wood that we can smoke on the coals to give a similar flavor profile? BTW; I LOVE smoking wings! And I love Jerk seasoning even though I am from the southern U.S. Tennessee, and Live in the Atlanta area. I feel that there are A LOT of similarities between Southern Soul cuisine, and Caribbean cuisine. I definitely want to explore this further. Any ideas on the wood to smoke?

Finally. Someone is showing how to prepare breasts for jerk grilling. I wasn't sure what to do with the white meat that some in my famly prefer. Everyone seems to use leg quarters only. THANK YOU !!! I just subscribed.
It's supposed to look brown actually so you're on the right track. Remember, the camera and the natural lighting outside adds a different color. Once it tastes good, then that's all that matters!

I blended my ingredients but it looks brown compared to yours which looks reddish.
I think i didn't get the right balance. Maybe too much greens in mine. I'm kinda disappointed.
