    Just so you know I watched this video years ago, did online classes with them (covid but the classes where 110% worth it) opened my 1st shop a year ago and about to open a 2nd one

    Great vid. Thanks for sharing. Now I have to seriously debate adding more time to my Japan trip to do the three day course. I like that translation and the opportunity to serve Ramen to customers in Japan is included. You get the experience and the craft to build on your ramen making base all in one. Great share, Brian!

      @Watusi Yu Ajinomoto is used like salt and pepper here. Japanese don't subscribe to the "OH NO! MSG IS GONNA KILL YOU!" propaganda

      the msg scare is just a myth created back in the 70s when people reported getting sick from chinese restaurants. naturally they demonized msg because it was a foreign ingredient. yet msg occurs naturally in various vegetables and meats just like salt and is used conservatively as an umami/flavor enhancer

    General question about ramen schools, do they tend to do classes year long or only seasonal? Also, how important is it to be a well versed general cook vs a novice cook interested in ramen?

      +joy12division almost every month of the year. I’d say the mix of students is 50/50 chefs vs amateur. In general ramen isn’t technically difficult

    Travel buddies for this course ? So down ! 💪🏾 I have watched nothing more than Ramen videos on YT since discovering Strictly Dumpling (Mikey Chen). I wish we could post pics here. I even made my own Tonkotsu ramen, thanks to my local Asian mart. So good and it was my first time. It even had me making just the eggs as a snack here and there lol.

      I've been to Japan 5 times and can't wait until the world is normal so we can travel again. If you haven't gotten the chance to go yet i cannot recommend it enough.

    Hi! For tonkatsu you're supposed to cook the broth for like 12 hours. How would one do that at home and go to work or sleep? Can I split up the cooking time, like 3 hours before work, shut the stove off and leave it it there, then start it up again when I come home? I'd also be wary of leaving the stove on when sleeping. Thanks!

      +Lenny Pearl there are some tricks to aerate the soup that some home cooks use, like hitting it with a blender.

      @@ramenadventure I decided to try splitting the time and it actually worked! 8 hours in the evening, then shut it off and started it up again in the morning for 4-1/2 hours. The broth is now in the fridge and really gelatinous - almost solid! So I think it worked :-)

      12 hours is insanely unnecessary. A 4 hour strong boil. Keep in mind that the more u extract, the more broth u make so if u shorten the time u shorten the amount of broth u have ( at least with the right consistency)

    This is awesome but I am not sure how one would just have over 3000 dollars just laying around. And that doesn't even count the cost of the trip. So yeah expensive but if your living in Japan for a year or two then maybe that cost isn't too bad. But too expensive for a trip.

      Honest question because I don't know, would halal require anything that might restrict standard Chicken or Beef ramen styles from essentially being the same thing with verification? At least in my part of the US a lot of food get labeled kosher if they naturally have no forbidden components and my understanding is that they just get frequent inspections to confirm the process is still correct and otherwise make the same food they always did
