I was putting off making this recipe for gods know why- then I decided today with a craving for Mac and cheese I was going to skip the box stuff. I didn’t have Dijon or garlic powder but I loaded it up with Chili powder and I was surprised at how easy it was to make. I just sat there stirring and stirring and eventually it was done. Wow, my cheese sauce only goes through the five stages of grief. It actually skips me needing to add any kind of salt too. Good catch on the scallion too, I'm a scallion breeder and I can tell you those types are especially rowdy. Make for good macaccini cheesefredo.
I just wanted to suggest blooming spices in the butter first! It really amps up the aromatics and adds much more flavor rather than when you incorporate spices into the roux+milk mix
As someone who has tried and failed at "baked macaroni and cheese" so many times, I cannot tell you how much I appreciate that slap of toast at the end.
When i make this i like to start with a can of tuna. No idea how there in the states tuna is usually conserved. But here is canned in olive oil, so i fry the tuna a bit in it's own oil to get some nice browning. then i use that same oil as the fat for the rue. It makes a great tuna and cheese sauce.
