Ingredients:
1 cup of caster sugar
1/2 cup of glucose syrup (corn syrup)
a few tablespoons of water
2 tablespoons of citric acid
1 tablespoon of baking powder
food colouring
2 tablespoons of flavouring (I used strawberry)
for fizzy dust:
3/4 cup of icing sugar
2 tablespoons of citric acid
2 tablespoons of baking powder
powdered colouring
extra 2 tablespoons of citric acid to pour over at the end.
note: if you want it more sweet than sour, don't add the citric acid into the mixture at the end - Навчання та стиль
I never thought to do it like this. This is very clever! No need for a high-pressure chamber at all, and the candy fizzes.
these taste SO good, and they really do give you a slight fizz

What a fantastic recipe. I love sour hard candies.
I agree with Ben, below. You can't time candy-making by the clock. Stoves & burners vary, as does boiling temperatures because of altitude, etc. And, the old method of testing by dropping a sample of candy into cold water is also subjective. An inexpensive candy thermometer takes the guesswork out of the process.

yes it is. what nobody seems to understand is that the tingling sensation comes from the acid of the citric acid and the base from the baking powder. This is exactly how pop rocks are made.
Did the baking powder make it opaque like that?

I love pop rocks first time I had them where in ozzy in chocolates
.. you could use white sugar, but just make sure its dissolved completely :)
when cracking them up you should make sure there is thin as possible so they do actually pop. if they're larger chunks you'll just taste the fizzynes

They use carbonation to make that popping in pop rocks, so you would need some special equipment and stuff

TheUltimateJimbob I read they put the hot soft candy in a pressurized chamber and mix the high pressure air into the candy as tiny bubbles. Then let it cool and harden and then de-pressurize the chamber and the bubbles maintain the high pressure in the candy.

Little tip, try to put the unbroken pop rocks in a paper towel so all the little pieces don't fly everywhere
