When I was in college I ended up just getting by on those tuna sandwich packs. Just straight from the bag. And microwaveable mashed potatoes

My favorite kind of rice in black rice it's so good! And whatever your cooking it with turns purple which is super fun!

Big tip on shakshouka that I love to share. Make a BIG pot of the base and portion it in cups to freeze. You can pop a portion or two out right from frozen into your pan. Once it is hot, in go the eggs. I love shakshouka, but it isn't fast since the stew is so much better when it cooks for awhile. This way I can have it whenever I want in 10 minutes with no chopping involved :)

I'm jealous of your ability to wear sweaters so much of the year. I love sweaters, but I hate being hot & live in the southern midwest US.
PLEASE! Cheap, healthy, and fast is what I'm looking for, haha. Typically, I make very basic meals (stir fried chicken with broccoli and brown rice; omelet with asparagus, bell peppers, and cheddar cheese; salad greens with nuts, goat cheese, tomatoes, and avocado) but I don't have many ideas! Always want to learn more.

But, another idea are Buddha bowls with a base grain of eg bulghar weat or cous cous, combined with a protein (chicken, tofu, tuna) and veg drizzled with a lemon & yoghurt sauce. It's a quick idea and should have dinner ready in 15 mins minimum if using pre prepared protein-I hope this helps xx

Make cottage cheese pancakes. Very simple and the ingredients itself are versatile: oats, cottage cheese and eggs
Nourish bowl is my go to and it’s super customizable. You can spend like 2 hours prepping all the components and build your bowl in like 5min when you want to eat. Each week pick a cuisine and plan your bowls around it. Mine always have these components:
- protein (quickest and cheapest is canned legumes or tuna salad made with canned tuna, celery, dill, scallions, mayo or try batch cook a big piece of salmon or chicken on a sheet pan)
- whole grain (quinoa, farro, barley, bulgur, ... there are so many awesome whole grain to discover)
- leafy greens (my fav is arugula but also try lettuce, kale, spinach)
- extra veggies (tomatoes, roasted eggplant/zucchini/peppers/cauliflower)
- dressing (yogurt + herbs + garlic = full proof but skip this if you want and just add tons of lemon juice and flakey salt)
- fun optional extras (cheese, nuts, seeds, pickled onions, everything Basel seasoning, etc)

I've been doing that a LOT lately! I'll either sprinkle hemp seeds for extra protein or chopped bananas to change it up :). I also LOVE raspberry jam with my toast.
Love your videos, and did anyone else how these meals are almost all vegetarian? Always on the lookout for creative, easy vegetarian recipes. I do have one note, Shakshuka is not an Israeli dish. It's very popular there, but it did not originate there, it's Norther African.
Hugely popular in the levant in general. Nobody knows where exactly it originated. Calling it Israeli is a bit inaccurate. It's a staple there, but it's a staple in a lot of countries.
Abbey you should look at the Extreme Emergency Budget Meals type of videos. I have seen a lot of these, where families of 4, 5, 6 have a budget of $40 (or similar) for food for the entire week. I'm curious about whether these budget meals meet nutritional needs, especially for growing kids.

"inexpensive nut butter" what kind of mythical creature is that
Peanut butter is the cheapest where I live, way more affordable than the others.
Peanut butter is pretty inexpensive where I live but I don’t know about other places. If you want other types of nut butter I really recommend keeping a eye out for sales in stores by you, coupons or coupon/deal apps and the clearance section. That helps bring down the price for me.
@@madalineriggs2858 in my country any trendy or healthy foods are ridiculously expensive, peanut butter is the cheapest nut butter but it's still really expensive and comes in 150 gram jars which is tiny for such a large price tag (i still buy it sometimes, but its more of a luxury item than a staple). stuff like lentils, chickpeas, non dairy milks, avocados, protein pasta,etc are all bank breaking lmao

Coconut milk or, if you don't like coconut like me, BROTH. More people need to start cooking their pasta and rice and potatoes in low sodium broth. Its SO good

My favourite cheap meal is a chickpea and spinach curry. I add roasted aubergine, sometimes roasted sweet potato too and a spoonful of coconut cream. So yummy!

Shakshouka is not an Israeli dish. It’s a North African, Arab and Israeli staple which originated from either North Africa or Turkey (or maybe Yemen). Curry is popular in Britain but that doesn’t make it a British dish. 😊

All I know is in Turkey we have shakshuka a lottt
My got to cheap and cheerful FDOE (everything bought in bulk or grown at home!)
Breakfast- a big cup of oats cooked with a Tbsp flaxseed (ground at home), then topped with a spoonful of peanut butter, a banana or wild strawberries/blackberries from our garden!
Snack: a carrot with peanut butter
Lunch: 2 sandwiches made from homemade bread, home grown veggies (avocado, lettuce, tomatoes etc), and for the protein, mashed chickpeas with chives, nutritional yeast and tahini!
Snack- a large mug of cereal (sultana bran at the moment is my fav).
Dinner- white rice, homemade Mexican black beans, mashed avocado and a tomato/cucumber/red onion/corn salsa.
Dessert- more wildberries from our garden, a carrot and 2 pieces of toast with peanut butter and our homemade jam.

It also looks like a very typical Eastern European dish I eat a ton of when in Romania and Bulgaria.

And for breakfast: mash up a banana, mix it with an egg, add cinnamon or honey to sweaten, and cook it as a pancake🙃

Hi Abbey! I know I comment way too much and it's always the same stuff... but it's bc I cannot thank you ENOUGH for the content you put out. It has helped me more than anything else in my life. Nutrition can be such a big field to study with so many people trying to sway you on this and that fad, supplement or diet. Thank you for teaching me about nutrition, as it was meant to be. About health and satisfaction :) I've never ever listened to my body when it comes to my diet. I've listened to media and pressure from family/friends/partners. Thank you for giving me the strength to trust myself and the knowledge to make good (and yummy) choices.
Coconut Flour tip: I buy bulk bags of dried dessicated coconut and make my own flour using my blender/food processor! It's nice to only make flour as I need it instead of having two bags of coconut to finish.

One tip I think elevates any meal is as soon as you buy your nuts and seeds, toast those bad boys. Just put them in the oven on medium heat till you start to smell them, but keep an eye at around ten minutes, you want to take them out when they're just shy of the level of toasted you want them because their oils keep sizzling for a few minutes after you take em out. Don't do seeds and nuts on the same tray because the seeds will toast much faster than the nuts!
Instant tasty addition to any meal.
My favourite breakfast are 3 slices of wholegrain crispbread with cottage cheese, 3 slices of turkey ham and 2 soft boiled eggs. I just love it and it keeps me super full til lunch.
Alongside with it I'll often have a piece of fruit or some raw veggies like a carrot, bell pepper or turnip.
That Buddha bowl 🍲 looks amazing!
I love chia seeds they are my favorite! I love Gatorade or lemonade for a cold drink in the summer with a few good heaping spoonfuls of chia seeds mixed in delicious and fun to drink cause of the texture from the jelley chia seeds😊
I usually have cream cheese on whole wheat toast for lunch and I just bought some milled flax seeds so I’ll definitely combine them now! Great tip!

I recently found frozen bell peppers that were already cut up at my local grocery store. I love throwing them in a pan with avocado oil, cooking off the water and some seasonings and spinach then scrambling them with eggs its super quick and it gives me extra veggies so I dont have to a salad every single day.

I love getting meal ideas, I would LOVE a video series about eating well with food allergies. I'm highly allergic to Peanuts, Chickpeas, Peas, Beans, Soy -- all the legumes. And intolerant to wheat and all nuts except almonds, coconut and pistachios. Ugh. It seems like so many heathy options are out of the question for me. And I know I'm not alone with special restrictive diets because of anaphylaxis. Thanks!!
Pan fried halloumi is a thing of beauty with Shakshuka, probably not authentic, I also add chickpeas and sweet baby peppers in with my shakshuka ❤️❤️❤️

My favorite cheap summer snack: a can of tuna, a dab of mayo, a bit of dill relish, chopped summer garden tomato, and a sprinkle of Everything But the Bagel seasoning. Sooooo good!!

I'm keto and while I do have meal plans and will be meal prepping my lunch and dinners, I'm always down for more breakfast ideas. I keep just doing eggs and bacon in different ways (friend, in an omelette, frittata etc etc). I might try a Shakshuka soon :D
These look so good! When I'm busy, sometimes I have pasta with 2% cottage cheese as a sauce and some broccoli. It's sounds kind of weird, but I love the taste of cottage cheese, and it's similar to cream sauce in a way!

For refried beans, you can just buy a can of no-salt added beans, drain them (save some of the liquid), put them into a skillet on low-medium heat, add a bit of sea-salt and cumin, and mash them in the skillet, adding some of the liquid to the consistency that you like. It's cheap and WAY better than the canned refried beans.
To add I would say if you have spices in the cabinet you can add those too.

One can also make their own refried beans......WAY better than the canned stuff, and super easy! You can use canned beans, but reserve some of the liquid. Just rinse off the beans before putting into the pan with a bit of oil, add the beans, mash (can also add other spices if you want), adding in the liquid to the consistency of refried beans that you like. It seriously takes about 5 minutes to make...and *chef's kiss* so good!

Cheap cold pasta sause: mix canned tuna (not the water or oil) with créme fraiche (2dl) and seson it. Maby some leftower weggies.

Best banana pancake: mash one banana with an egg, stir in one heaped dessert spoon of self raising flour and a pinch of salt til smooth. Fry - not too quickly or hot - in a good amount of extra virgin olive oil (and some butter if you’re into it). Flip when golden. Remove to serving plate. In the same pan, heat through some frozen blueberries and a little honey or maple syrup. Serve over pancake. Super quick and delicious. Easily feeds two if you chop it in half (too impatient to make two smaller ones). I’m going to try replacing the s r flour with coconut flour after watching your video.

this is an old video so i’m sure no one will see this but i feel like i have to say that you can make chia seed pudding with flax seeds!! they thicken up the same way overnight. i like mine whole but i think others like to grind them up (trader joe’s sells them ground). so much cheaper than chia seeds and i’m pretty sure i read that they are more sustainable as well (the texture is a bit different but sometimes i just mix 50/50 chia and flax and the texture seems the same to me)
