- We challenged chefs of three different skill levels - amateur Bianca, home cook Gabrielle, and professional chef Bill Clark - to make us a batch of their favorite sandwich cookies. Once each level of chef had finished and tasted their final product, we asked food scientist Rose to explain their choices from an expert's perspective. Which cookies are you saving room for after dinner?

He runs a bakery, not a restaurant. These things have to be produced in batches, and sold at a sensible price. Making his own pretzels would take time and money that seems unnecessary if their destiny is to be crushed to flour.

Can a level 1 chef make French macarons? I would say you are a level 2 at least if you can successfully make them.
@@tommynguyen7752 I consider myself a Level 1 chef and I have made French macarons several times. They looked a bit wonky, but tasted great!

I don't even know how to make them and never tried them either though wanted to try them but can't find them near me.
In Argentina we make the cookies a little bit smaller and thicker but overall it's traditionally correct

It's rare that I want to try all three versions on one of these videos, but this is an exception. All three levels created a product you'd expect for their cooking level, and they all ended up with a result that looks enjoyable.
All did well in the presentation too. This isn't the Emily-Lorenzo-Frank trifecta, but it's a solid grouping. I'd like to see them together again.
Unfortunately, MeMe's Diner is permanently closed as of 22 November. I wish Bill the best of luck!

i mean he still kinda did with the lye bath and please tell me for a professional kitchen if you would spend 5 hours making enough pretzels just to crush them and turn them into a flour that would taste probably exactly the same as buying the pretzels yourself.

You can make the dulce de leche without opening the can like she did, we usually let the can sit in the water actually! It’s an hour and a half “cook time” and it’s done and you can do several cans and use them whenever you need them! In case someone wanted to give it a try!

all the cookies look great and all the chefs did wonderful. but ah... alfajores! i remember my first time trying them at my dad's cousin's house in Perú, literally exactly 20 years + a few days ago haha. they quickly became my new favorite dessert! i felt lucky to find them in the US after that. thanks Ms. Gabrielle for showing your recipe! + the other chefs' recipes too ^^ saludos from Seoul ~

Sure, you can make fun of Bill for starting with store bought pretzels, but then he pulls out the ingredient that has to be handled very cautiously so it doesn't start TURNING YOUR HANDS INTO SOAP. That's some Level 3 cred right there.

That's actually what happens when lye (sodium hydroxide) gets on your skin. Science student here, had too much experience with it!

It's called saponification, soap can dissolve fat because its made out of it
That’s how they make soap! They combine lye and a fat whether it’s oil, goats milk, or yes... the oils from your skin, and through a process called saponification it is turned into soap! I make soap and my first reaction when he said he was making a lye solution was “WTF is about to happen here!? 😳” My only experience with lye has been in soap making.
The lye solution also heats up, which is why he used cold water. It wasn’t explained very well in the video, but if you mix lye into room temp or warm water it can actually end up pretty hot. When people make goats milk soap they have to start with frozen icecubes of goats milk because if you start with it as a liquid it will get so hot it will scorch the goats milk. Another note... it can also create gasses when you add the lye to liquid so it should always be done in a well ventilated area.

This time the levels were all pretty similar. Level 1 didn't use ready made cookies. Level 3 used ready made pretzels and peanut butter. And all looked so tasty!
