Beets are great! I love the leaves, which tends to freak out my neighbours because they think the only edible part of the beet plant is the root. Then again, they didn’t know young radish leaves and young pea shoots are edible (and tasty!) either.
One of my daughter’s favourite salads is what we call ‘barbie salad’ which is basically any salad with a creamy dressing and cooked, roasted or steamed red beets added to it. The beetroot juice turns the dressing virulently fuchsia pink. Mix the beets through the dressing first, allow to stand for a while, mix again, then add whatever else goes into your salad. It’ll be so pink you’ll have to put sunglasses on to look at it because that colour almost glows in the dark.
Beet pairs very well with apple in a salad, by the way. Some beets, a bit if apple, a few pickles chopped in there,perhaps a few fresh lettuce leaves (or other leafy greens) and for those who like it, a few cooked potatoes. Your favourite dressing and the protein of your choice, and you’ve got yourself a super healthy, tasty, colourful meal in a bowl. Add a few crushed toasted pecans or walnuts too, sprinkled on top. You won’t be sorry. 😊
Gardening note: can’t grow beets to save my life. The ever-omnivorous canines dig them up and munch them into oblivion. They’ve got a taste for them and there’s no keeping an American Staffordshire Terrier out of a section of the garden if he’s determined to get in. The Chihuahua then traipses through the hole after him and carnage ensues. On the plants. An hour later I’ve got two dogs in a food coma. And no beets. 😂
I love beets. When I grew them I always kept some to can pickle.

Legumes are unique in that ability. Our neighborhood squirrels plant peanuts for us.
