    Thank you so much! I have used store-bought marzipan in the past- but have had trouble finding the last several years. I searched the internet for a marzipan recipe, and found several, but decided to try yours. I am so very pleased with the outcome of the dough (I have not molded yet and will post again when I do). I made two batches separately in my food processor and the dough looks great and very pliable. I estimate that I saved around $25 with the amount I made😊

      hmmm not quite sure since it's probably a slightly different consistency, but let us know how it goes if you try to substitute!

    Love this demonstration! If you used eggs whites, how much would you use? Gram weight? (I had a recipe for a "marzipan" torte that used rolled out marzipan as the "icing" and ground hazelnuts for the cake flour. The cake was totally gluten free. Wish I could find that recipe!) Thank you again, for the demo 🙂

      Thank you!! If using egg whites we use the same process of adding a tablespoon at a time, then adjusting if needed (1/2 a tablespoon at a time!) And that cake sounds delicious, reminds us of a Swedish princess cake but with hazelnut flour!

    Isn't this almond paste rather than marzipan?

      Nope! Almond paste has a lot more almonds and may be coarser/more spreadable. Marzipan is much sweeter and has the texture of play-doh!

    Real crafters of marzipan insist on fresh almonds from either California or Spain. Blanche. Ground. Egg whites. Minimally processed sugar or vanilla
