I searched the internet for a marzipan recipe, and found several, but decided to try yours. I am so very pleased with the outcome of the dough (I have not molded yet and will post again when I do). I made two batches separately in my food processor and the dough looks great and very pliable. I estimate that I saved around $25 with the amount I made😊
Love this demonstration! If you used eggs whites, how much would you use? Gram weight? (I had a recipe for a "marzipan" torte that used rolled out marzipan as the "icing" and ground hazelnuts for the cake flour. The cake was totally gluten free. Wish I could find that recipe!) Thank you!! If using egg whites we use the same process of adding a tablespoon at a time, then adjusting if needed (1/2 a tablespoon at a time!) And that cake sounds delicious, reminds us of a Swedish princess cake but with hazelnut flour!

Isn't this almond paste rather than marzipan?
Nope! Almond paste has a lot more almonds and may be coarser/more spreadable. Marzipan is much sweeter and has the texture of play-doh!
Real crafters of marzipan insist on fresh almonds from either California or Spain. Blanche. Ground. Egg whites. Minimally processed sugar or vanilla
