My jaw dropped when you added so much almond extract. I only put 1tsp for my cookie dough that makes 12 large cookies and the flavor comes through even after being baked. This must have been 1Tbsp for such a small amount of marzipan. O-O

Yes, of course. You should have fun and experiment while baking. I think a thinly rolled sheet of marzipan between stacks of a layer cake would add a good flavor and chew to the soft cake. I think adding the marzipan after baking will work best, because cooking the marzipan with the cake batter will probably break it down to an almond syrup (could still be tasty, but no longer really marzipan at that point).
Oops, the ground almonds I bought must have had the skins still in there. Tasty, but not pretty enough to put on top of a cake ... I will try with whole scalded and peeled almonds another day. I really like using a sugar syrup instead of all that powdery icing sugar to make marzipan.
I made this and broke my food processor. Maybe pouring hot sugar in the food processor is not a good idea😅 but the marzipan turned out great and tasted amazing. Maybe use a better quality food processor next time😂

It will depend on the blender, but a strong enough blender will be capable of turning the almonds to paste. You may need to add the sugar syrup with the almonds in the blender to provide liquid for the blender blades to pull in the almonds. It may be tricky because the syrup will need to be hot enough that it makes the mixture liquid, but the finished marzipan needs to set to a chewy dough-like solid.
I tried this with my Ninja chop - it was an issue because you cannot stream in the liquid as it is going. With honey being so sticky- it didn’t work well adding it in small amounts with the blades shut off. Every time I want to try a new recipe it seems I need some new appliance. Lol I have a blender, a kitchen aid mixer, a Ninja chop but no food processor that allows liquid to be streamed in…
Made the marzipan for stollen. Substituted maple syrup for honey. Worked like a charm. Delicious!

Sounds like you boiled the sugar to hard crack stage. Cook just to dissolve.

One keeps the skins on the almonds the other skins are removed before ground
Almond flour has had some of the oil extracted, so it will be drier than a paste of freshly ground almond.
