    Recipe
    Yield: Makes about 1 lb (450 g)
    Prep Time: 20 minutes
    Cook time: 5 minutes
    Ingredients
    1 ¾ cups (200 g) ground almonds (almond meal)
    1 cup (200 g) granulated sugar (caster sugar)
    ¼ cup (60 mL) honey
    2 Tbsp (30 mL) water
    1 tsp (5 mL) pure almond extract
    Directions
    1. Place the ground almonds into a food processor. Stir the sugar, honey and water in a small saucepot over high heat until it reaches a full boil and the sugar has completely dissolved. Pour this into the food processor while it’s running. Add the almond extract and blend until the marzipan comes together. While it’s still warm, shape this into a log and wrap in plastic wrap well. Leave at room temperature to cool and store well-wrapped until you are ready to use it.
    Marzipan will keep, well-wrapped, for up to a month, or can be frozen up to 3 months.
    CHOCOLATE DIPPED MARZIPAN
    Yield: about 4 dozen pieces (depending on size of cut-out shapes)
    Prep Time: 20 minutes
    Set Time: 20 minutes
    Ingredients
    ½ recipe (225 g) homemade marzipan
    1 ½ cups (270 g) dark or milk chocolate chips
    icing sugar, for dusting when rolling
    Directions
    1. On a clean work surface, gently knead the marzipan to soften it, using a sprinkling of icing sugar as needed on the surface to keep the marzipan from sticking. Roll out the marzipan to about ¼ -inch (6 mm) thick and use a small cookie cutter (1 1/2-inches/40 mm is a nice portion) to cut out shapes. Place these on a parchment-lined baking tray.
    2. Melt the chocolate in a metal bowl placed over a pot filled with an inch of barely simmering water, stirring gently until smooth. Remove the bowl from the heat and dip each marzipan piece into the chocolate half way and shake off excess chocolate before placing on the tray to set. Let the chocolate set (or chill for just 10 minutes) and then store in an airtight container.
    The dipped marzipan will keep for up to 2 weeks in an airtight container.

    This marzipan was so good dipped in dark chocolate! I used maple syrup instead of honey and added a bit of salt. I'm excited to make it again!

    Thanks so much. I have been working my way through the internet looking for instructions to make a Princess cake. I would love to see a video from you on making a Princess cake since your instructions for making marzipan are easy to follow. The other recipes I have found use powdered sugar instead of granulated castor sugar. Is there a difference when using marzipan to top a cake?

    Marzipan is made with confectioners' sugar and rose water, what Anna makes is almond paste which is very similiar to Marzipan

      Sounds like you boiled the sugar to hard crack stage. Cook just to dissolve.

      While they both are made of almonds, marzipan and almond paste are completely different creatures. Marzipan is smooth, sweet, and often dyed and molded into shapes. ... Almond paste, however, is coarser, less sweet, and used as an ingredient or filling for baked goods.

    My jaw dropped when you added so much almond extract. I only put 1tsp for my cookie dough that makes 12 large cookies and the flavor comes through even after being baked. This must have been 1Tbsp for such a small amount of marzipan. O-O

      Almond flour is ground almonds, so yes

      @@Kaz-zp4pq Almond flour has had the almond oil extracted, so it will not be equivalent to freshly ground almonds. However, if you re-add some kind of nut oil to almond flour, it might turn out similar to regular ground almonds. It would be an interesting cooking experiment.

      One keeps the skins on the almonds the other skins are removed before ground

      Almond flour has had some of the oil extracted, so it will be drier than a paste of freshly ground almond.

    I made this and broke my food processor. Maybe pouring hot sugar in the food processor is not a good idea😅 but the marzipan turned out great and tasted amazing. Maybe use a better quality food processor next time😂

      Yes, of course. You should have fun and experiment while baking. I think a thinly rolled sheet of marzipan between stacks of a layer cake would add a good flavor and chew to the soft cake. I think adding the marzipan after baking will work best, because cooking the marzipan with the cake batter will probably break it down to an almond syrup (could still be tasty, but no longer really marzipan at that point).

    Oops, the ground almonds I bought must have had the skins still in there. Tasty, but not pretty enough to put on top of a cake ... I will try with whole scalded and peeled almonds another day. I really like using a sugar syrup instead of all that powdery icing sugar to make marzipan.

      It will depend on the blender, but a strong enough blender will be capable of turning the almonds to paste. You may need to add the sugar syrup with the almonds in the blender to provide liquid for the blender blades to pull in the almonds. It may be tricky because the syrup will need to be hot enough that it makes the mixture liquid, but the finished marzipan needs to set to a chewy dough-like solid.

      I tried this with my Ninja chop - it was an issue because you cannot stream in the liquid as it is going. With honey being so sticky- it didn’t work well adding it in small amounts with the blades shut off. Every time I want to try a new recipe it seems I need some new appliance. Lol I have a blender, a kitchen aid mixer, a Ninja chop but no food processor that allows liquid to be streamed in…
